Role: Visitor Services Assistant Catering / Business Function: North East Built Heritage Region
Reports to: Property Manager/Head Gardener / Pay Band/Starting Salary: B, £8.72 per hour
Location: Pitmedden Garden and Museum of Farming Life, Pitmedden,Ellon, Aberdeenshire AB41 7PD / Type of Contract: Seasonal from 30/04/2018 – 30/09/2018, core hours = 40 per week, may include some weekend and occasional evening working

Purpose of the role:

To provide a world-class service for visitors to Pitmedden’s tearoom, ensuring that appropriate hot and cold foods and beverages are provided in order to generate income for the property (and the Trust) that supports its conservation and financial sustainability, and that all principles and regulations governing food hygiene and allergens are strictly upheld.

Key Responsibilities:

1To supervise the tearoom area (including patio- and picnic areas) on behalf of the Property Manager/Head Gardener including (but not limited to): open-up/close-down, provision of profitable hot and cold foods and beverages, stock ordering and control, presentation of tearoom and hygiene of kitchen and tearoom, sales, takings reconciliation and reporting, staff supervision/training/performance.

2To deliver world-class welcome, customer service and catering experience to all visitors, embedding the Trust’s values and enhancing the Trust’s reputation.

3To assist the Property Manager/Head Gardener in the ongoing development and ‘refreshing’ of the catering offer, including:

aConsideration of new menu items;

bMovement of food displays and menu information to (re-)invigorate sales;

cSuggestions for special offers etc.

4To undertake and supervise “front-of-house” and patio- table service, including (but not limited to):

aWelcoming visitors and ascertaining their requirements;

bFulfilling customer orders of hot and cold foods, snacks, and beverages;

cUp-selling to enhance visitor enjoyment and income generation;

dCleaning (table and counter clearance and hygiene, vacuuming, dusting etc);

eTill work and reconciliation.

5To undertake and supervise general kitchen duties, including (but not limited to):

aFood preparation and presentation;

bDish-washing;

cCleaning (adhering to cleaning regimes).

6Occasional evening work at Property events.

Common Responsibilities:

All staff and volunteers at Pitmedden are expected to:

1Embody the Trust’s values;

2Adhere to the property’s quality standards for personal appearance (including wearing of uniform dependant on role), conduct, and customer care;

3Work within the property’s “Safe System of Work” (the system for managing Health & Safety);

4Uphold the property’s environmental policies;

5Work flexibly across property departments/functions as and when required.

Scope of Role

People Management

Not a line manager but will supervise other seasonal staff/volunteers as required and will act as duty manageroccasionally.

Will have daily frequent interaction with visitors.

Will occasionally meet/greet/serve official guests and/or contractors/suppliers on behalf of the Property Manager/Head Gardener.

Financial Management

Not a budget holder.

Will undertake cash-handling and reconciliations, process financial transactions through IT, and may be called upon to review simple financial information/reports.

Will be expected to meet (if not exceed) catering sales targets.

Technical

Will be expected to hold and adhere to Intermediate Food Hygiene certificate and requirements, and uphold “Cook Safe” and “Retail Safe” regimes.

Experience required for this role

Proven experience in customer-facing role(s) in catering (ideally at a visitor centre) – including cash-handling and (active) selling;

Excellent knowledge and experience of costing, preparing, and presenting menu items (suited to a traditional tearoom context) that are profitable;

A proven track record in working effectively with others and supervising staff/volunteers.

Skills/abilities required for this role

Excellent numeracy and literacy coupled with confidence and an eye for detail.

Excellent organisational, administrative and time-management skills with the ability to prioritise and re-prioritise workload to meet changing demands;

The ability to assimilate and analyse information to help make decisions;

Excellent interpersonal skills and sense of “customer service” (internal and external);

The ability to work independently with minimal supervision;

An empathy with heritage attractions and the work of the National Trust for Scotland.
