Executive Chef –Exmoor Country Club

Exmoor Country Club is a premier private country club on the North Shore of Chicago renowned for its excellence in recreational offerings and fine dining, and exceptional service to members and guests. Exmoor is currently seeking an Executive Chef to bring new energy and creativity to, and overall professional management of, its culinary program.

This position will be a direct report to the General Manager and will collaborate with other relevant managers to result in successful and rewarding member experiences. Effective supervision and development of a fully staffed culinary team and management of the functional aspects of the program is essential to bring desired results.

Position Summary:

The Executive Chef coordinates with front of the house managers, the General Manager and applicable committee chairs to ensure complete member satisfaction in all aspects of casual and fine dining, Club events, and private events. This position is also responsible for all food and pastry production for all restaurant and banquet functions, as well as outlet operations; developing menus, approving food purchasing specifications, and creating new recipes in line with culinary trends. The Executive Chef will also train and develop all culinary staff, and mentor effectively for highest production standards. Management also includes developing, monitoring and controlling food cost and labor budgets for the department, and maintaining the highest food quality, sanitation standards, and a healthy and safe work environment.

Qualifications:

Should possess minimum five years in a similar capacity; private country club, luxury resort or hotel experience desirable;

Maintain professional education in the culinary field, required certifications, and memberships in appropriate professional organizations.

Proven track record of management in all areas of culinary operations

An attitude and commitment to excellence in culinary programs and practices

Dedication and understanding of time commitment and seasonal demands

Educational credentials from a reputable culinary institution (CIA, Cordon Bleu)
