Thrive – Meal Setup, Serving and Cleanup Tasks

The Tuesday evening mealat our Thrive community is served from 5:30 until 6:00 pm. Tasks and timeline for room and kitchen setup, serving and kitchen cleanup are summarized below.

Time: 4:45-5:15 pm

  • Check that tables in meeting room are clean – wipe as needed with Clorox wipes in pantry
  • Move silverware bin and napkins to the serving table on the east wall in meeting room
  • From the salt/pepper tub, located in the back pantry,place salt & pepper on each eating table in meeting room and leave tub on a cart by the serving tables
  • Make coffee [ one pouch] and Ice tea [one pouch] at the coffee maker station to the right of the food serving window, and2 pitchers of lemonade from the powdered mix in the pantry on the THRIVE rack at end of pantry.
  • Assist cook as needed to prepare salad or dessert plates

Time: 5:15 – 5:30 pm

  • In a large plastic bowl located across from the 3 sink array on far wall, fill with ice from ice machine to the right of the big refrigerator and place scoop in bowl
  • Move bowl of ice, 3 pitchers of tea, 3 pitchers of water and lemonade to meeting room drink table on North wall.
  • Place 2 coffee warmers and coffee servers on the drink table on the North wall of the meeting room and be sure to plug in the warmers.
  • Set up serving window area – plates [60], serving utensils, food pans
  • Fill a plastic tub with soapy hot water for the dirty dish window to place dirty silverware after meal
  • Start dishwashing machine from instructions on front panel of dishwasher, and begin washing. Health codes require all clean dishes/utensils to “AIR Dry” untouched and then placed into the storage carts or designated storage area after dry.

Time: 5:30 – 6:00 pm

  • Position square trash container in hallway by dirty dish window
  • Serve food to guests as they come to serving window. Guests are welcome to come back as often as they wish as long as food remains. Some guests will not arrive til around 6:00 from work so plan enough food until 6:00 for about 10 servings.
  • Refill Drink Pitchers on drink table as needed. If lemonade runs out, that is OK but note it for next week to consider making a third pitcher.

Time 6:00 –7:00 pm( As soon as all guest have been served then the next set of tasks can begin)

  • Collect remaining glasses, plates, serving utensils, etc. from meeting room
  • Collect condiments, salt & pepper, napkins, etc. and return to storage area
  • Wash plates, glasses, silverware, pots, pans, etc. using dishwashing machine and sink
  • Drain and wash coffee and tea machines
  • Package leftovers for Team leaders to take home after meeting. Check with the Site Coordinator [Sarina] on home many team leaders to package leftovers for.
  • Remove garbage to outside bin and reline trash cans
  • Clean counters and surfaces in kitchen
