Purpose

To demonstrate your ability to:

•Apply knowledge and problem-solving skills to practical activities in food and hospitality

•Apply management, organizational, and problem solving skills that demonstrate an understanding of contemporary issues in the food and hospitality industry

•Make and justify decisions about issue related to food and hospitality

•Select and use appropriate technology to prepare and serve food, applying safe food-handling practices

•Work individually and collaboratively to prepare and present activities that support healthy eating practices

•Evaluate the impact of sustainable practices or globalization on the food and hospitality industry

Description of assessment

The task has three parts:

1.Action Plan:

Murraylands Food Alliance is a programme being that has been formed to promote the food production in Murray Bridge.

  1. Who makes up the MFA?
  2. What is the aim of the MFA?
  3. Why is it in the Murraylands?
  4. Who are the partners of the MFA?
  5. How will the MFA benefit the local economy?
  6. What are the four priorities for the MFA?

2.Practical Application:Students are to select and prepare a dish showcasing regional produce that would be suitable for a café style menu.

3.Evaluation: Individually students complete an evaluation report in which they explain the connection between action plan research and dish decision, their performance in the practical application, the processes involved in the practical application and the outcome. In their evaluation report they formulate conclusions and recommend possible improvements.

Assessment Criteria

  • Development of some specific knowledge, skills, and understanding related to the selected SACE Stage 2 subject KU1
  • Understanding of one or more concepts of the selected subject KU2
  • Planning, exploration, and development of strategies to complete tasks. PO1
  • Reflection on the development of some specific knowledge, skills, and understanding related to the selected SACE Stage 2 subject. AR1

Assessment conditions

Action Plan: 1 week

The action plan may be presented in written, oral or multimodal form and should each be a maximum of 500 words if written or a max of 3 minutes for oral, or the equivalent in multimodal form.

Practical Application: One Double lesson, with a double for mise en place beforehand

Evaluation Report: 1 week

The evaluation may be presented in written, oral or multimodal form and should each be a maximum of 500 words if written or a max of 3 minutes for oral, or the equivalent in multimodal form.
