Breakfast

Chocolate Strawberry Oatmeal

Ingredients:

-1 serving of raw oats

-1 cup frozen strawberries

-1.4 tsp salt

- 1 cup water or milk

-1/3 tbsp. creamer

-chocolate chips (optional)

-sweetener (as needed)

Directions: The night before microwave the oats, salt, and water in a microwavable container for 3 minutes (2 minutes, if using quick oats). Let sit in microwave for 5 minutes before transferring the uncovered container to the fridge. On the next day add the rest of the ingredients and microwave again until the berries melt into the oats. Add chocolate and sweetener as desired.

Pancakes in a Mug

Ingredients:

-1 mug

-2 tbsp. whole wheat pastry flour

-1/4 tsp cinnamon

-1/4 tsp baking soda

-1/4 tsp vanilla extract

-1 egg

- 3 tbsp. milk

-1 tbsp. oil

- Maple syrup and toppings (optional)

Directions: Whisk together all ingredients in mug. Mix thoroughly. Microwave on high for 2 minutes. During the cooking process, the pancake will come over the top of the mug. It will go back down into the mug once the microwave door is opened. Top with maple syrup and toppings as desired.

French toast In a Mug

Ingredients:

-2 slices of bread

-1 mug

-1 egg

-1 tbsp. butter

-3 tbsp. milk

-cinnamon (as needed)

-drop of vanilla extract (optional)

-syrup (optional)

Directions: Cut your bread into cubes. Rub or melt butter into bottom of mug. (One large mug or 2 small mugs). Place bread into mug and lightly push down. In a separate cup or small bowl, mix the egg, milk, cinnamon, and vanilla (if desired) together with a fork. Pour mixture over bread and push down lightly. Let soak for 1 minute. Microwave for 1 minute, add 10 seconds until it is to your liking. Add syrup (if desired).

Scrambled Eggs

Ingredients:

- 1 mug/small bowl

- 2 eggs

- 2 tbsp. milk

- Salt & pepper (as desired)

Directions: Beat eggs, milk, salt, and pepper into mug or small microwavable bowl until blended. Microwave for 45 seconds and stir. Microwave 30-45 seconds more. Serve Immediately.

Lunch/Dinner

Mac & Cheese

Ingredients:

-1 microwavable bowl

-1/2 cup macaroni pasta

-1/2 cup water

-1/2 tsp salt

-1/4 cup milk

-1/4-1/2 cup sharp cheddar cheese (or any other cheese desired)

Directions- Combine pasta, water, and salt into microwavable bowl. Microwave on high 2 minute intervals until pasta is firm, stirring between each interval. This should take 6-8 minutes. If the pasta absorbs all the water before finishing cooking, add another 2 tbsp. of water. Stir in milk and cheese. Microwave on high 30 second intervals until cheese has melted into creamy sauce, stirring in between each interval. This should take 1-1.5 minutes. For a creamier sauce, add an extra tbsp. of milk and cheese.

Chicken Fajitas

Ingredients:

-1 microwavable baking dish

-1 boneless chicken breast; cut into strips, approximately 3 inches long and 1/2 inch wide

-1 green pepper; cut in thin slices

-1 sweet onion; cut in thin slices

-salt & pepper (as desired)

-1 lime

- seasoning of your choice

-tortillas

Directions: Place chicken strips, bell peppers, and onion slices into shallow microwave baking dish. Toss to combine. Add fajita seasoning of your choice, and salt & pepper to taste. Stir chicken mixture to distribute the seasoning evenly. Place dish in microwave. Cover with lid or waxed paper and cook chicken on high for two minutes. Remove chicken from oven, and stir to redistribute the chicken for even cooking. Microwave again for 2 minutes. Cover 2 tortillas with a paper towel and heat for 30 seconds on high. Place chicken in center of tortillas and top with any extra toppings.

Green Beans

Ingredients:

- 1 microwavable bowl

-1 microwavable lid/plate

-green beans

-1tbsp water

-butter, salt & pepper, seasonings (as desired)

Directions: Put beans in large bowl. Add water. Cover with lid/plate. Cook on high for 1 minute. Test doneness and repeat in 30 second intervals until seamed to your liking. May require draining. Add butter, salt & pepper, and seasonings (as desired).

Southwest Stuffed Peppers

Ingredients:

-6 large green bell peppers

-1 pound lean ground beef

-1 medium onion; sliced

-2 cups Kellogg's Rice Krispies cereal or Kellogg's Cornflakes

-1/8 tsp minced garlic

-2 tsp chili powder

-1 tsp salt

-1/8 tsp pepper

-1 tsp sugar

-1/2 cup shredded cheddar cheese

-1 small can of tomato paste

-1 can of whole peel tomatoes; drained

Directions:

Wash peppers. Cut off tops and remove seedy portions. Lightly salt inside of each pepper. Place peppers, upright, in microwavable glass baking dish. Set aside. Place ground beef and onion in separate baking dish. Stir to crumble. Microwave on high 6-7 minutes or until beef is cooked, stirring occasionally. Drain of drippings. Add remaining ingredients except cheese. Stir to combine, cutting tomatoes into pieces with spoon. Spoon filling into peppers, dividing evenly. Cover stuffed pepper with plastic wrap. Poke several holes in plastic wrap to let out steam. Microwave on high for 15 minutes or until filling is thoroughly heated and peppers are tender. Sprinkle tops with cheese. Microwave on high until cheese melts.

Mini Quesadillas

Ingredients:

-flour tortillas

-1 cup shredded cheddar (or other) cheese

-4 tsp diced onion (optional)

-4 tsp diced green chilies (optional)

-1 small tomato diced (optional)

Directions:

Place an even amount of cheese, onion. Chili and tomato onto each tortilla and fold once. Cook for 4 minutes. Checking every 1 minute.

Baked Potato

Ingredients:

- Russet potato

-butter (optional)

-sour cream (optional)

Directions:

Wash the potato. Season potato with salt or pepper. Prick the potato with fork. Place potato on microwavable plate. Put in microwave. Cooking times depend on microwave; most medium to large potatoes take 8-12 minutes. Check if it is cooked and let sit for 5 minutes. Serve.

Snacks

Banana Bread in a Mug

Ingredients:

-1 mug

-4 tbsp. & 2 tsp flour

-1/4 tsp of cinnamon

-1/4 tsp baking powder

-1/8 tsp baking soda

-1/8 tsp salt

-2 tbsp. chocolate chips or chopped nuts (optional)

-1/3 cup ripe banana

-3 tbsp. light brown sugar

-2 tbsp. vegetable oil

-1/4 tsp of vanilla extract

Directions: In a small bowl combine flour, cinnamon, baking powder, baking soda, and salt. Add chocolate chips or nuts (if desired). Stir in mashed banana, sugar, oil, and vanilla. Pour batter into mug. Cook on 50% power, 1 minute at a time, for 3-4 minutes.

Chex Mix

Ingredients:

-1 large microwavable bowl

- 3 cups corn Chex cereal

- 3 cups rice Chex cereal

-3 cups wheat Chex cereal

-1 cup mixed nuts

-1 cup bite sized pretzels

-1 cup bite sized garlic flavored bagel chips

- 6 tbsp. butter

-1/2 tsp seasoned salt

-3/4 tsp garlic powder

-1/2 tsp of onion powder

(Can do smaller amounts, if wishing for smaller serving size)

Directions: In large microwavable bowl, mix cereals, nuts, pretzels, and bagel chip; set aside. In separate small bowl, microwave butter uncovered on high for 40 seconds- or until melted. Stir in seasonings. Pour over cereal mixture; stir until evenly coated. Microwave uncovered on high for 5-6 minutes, thoroughly stirring every 2 minutes. Spread on paper towels to cool.

Desserts

Healthy Chocolate Mug Cake

Ingredients:

-1 mug

-2 egg whites

-1/4 cans applesauce

-2 tbsp. flour

-1/4 tsp baking powder

-2-3 tsp sweetener

-1 tbsp. cocoa powder

-1 tsp water

-1 tbsp. dark chocolate chips (optional)

Directions:

Combine all ingredients in mug. Use a fork and mix well. Microwave for 2 to 2:30 minutes until done. Loosen cake with knife and put on plate or bowl. Eat or put toppings on for more flavor.

Cheesecake in a Mug

Ingredients:

-1 mug

-2 tbsp. confectioners’ sugar

-2 tbsp. fat-free sour cream

-3 tbsp. low fat cream cheese

-1/4 tsp lemon juice

-1/4 tsp vanilla extract

-1/2 egg beaten

-1 vanilla wafer

-1 mix-in (optional)

Directions:

In small bowl, mix together sugar, sour cream, cream cheese, lemon juice, and egg until well combined. Fold in mix in.Microwave on high for 1 minute. Open door for 20 seconds, close, and microwave again for 45 seconds. Take out of microwave and let cool for 10 minutes. Transfer to fridge for 2 hours. Serve with crushed vanilla wafer on top as crust.

Mini Chocolate Cheesecakes

Ingredients:

-3 graham crackers

-1 tbsp. unsalted butter

-4 ounces low fat cream cheese

-1 egg

-4 tbsp. sugar or sweetener

-1/4 cup chocolate chips

-1/4tsp almond extract

-1/4 tsp vanilla extract

-1/4 cup fat-free sour cream

-2 small cups

Directions:

Crush graham crackers. Melt butter at 70% setting for 30 seconds. Mix crumbs into butter with fork. Press crumbs into cups with your thumbs. Microwave cups for 30 seconds on high. Soften cream cheese in microwave. Put cream cheese, egg, 2 tbsp. sugar, and almond extract into bowl and mix until well blended. Melt all but 1 tbsp. of chocolate chips and add to cheese/egg mixture. Pour half of mixture into cup. Microwave on 50% for 3 minutes. Mix sour cream, vanilla extract, and remaining sugar with a fork. Top each cup with half of this mixture. Microwave on medium for 30 seconds. Let sit in fridge for 1 hour.

PB & Pretzel Truffle

Ingredients:

-1/4 cup peanut butter

-1 tbsp. brown sugar

-1 and 1/2 tbsp. confectioners’ sugar

-3/4 cup pretzel pieces

-1/3 cup dark chocolate chips

-sea salt

Directions: Put pretzel pieces in ziplock bag and crush into tiny pieces. Use spoon to mix together peanut butter, brown sugar, and confectioners’ sugar. Mix in crushed pretzels. In a small bowl microwave chocolate chips until melted. Use fingers to form small balls from mixture. Transfer ball to melted chocolate. Set truffle on wax paper. Sprinkle tops with sea salt. Let sit for few hours.
