Half Your Grains Whole Pancakes

½ cup wheat flour

½ cup all-purpose flour 1 egg

1 tablespoon sugar 1 cup non-fat skim milk

1 teaspoon baking powder 2 tablespoon oil

½ teaspoon baking soda

½ teaspoon salt

Directions

1.  In a large mixing bowl, stir together flours, sugar, baking powder, soda, and salt using a wooden spoon to fully blend soda & powder.

2.  In small mixing bowl use a whisk to briskly mix egg, milk and oil.

3.  Add wet ingredients into the dry ingredients stir together with a wooden spoon just until smooth.

4.  Preheat skillet to 300F. Lightly grease surface of hot skillet or griddle with cooking spray.

5.  Check surface of skillet for correct temperature by sprinkling water on the surface of the skillet. If the water drops dance on top, the skillet is properly warmed.

6.  Pour batter on hot griddle. Use about ¼ cup batter for each standard-sized pancake and about 1 T. batter for each dollar-sized pancake.

7.  When top-sides of pancakes are bubbly all over, a few bubbles have burst, edges begin to appear dry, flip pancakes and cook 2-3 min. Flip only once.

8.  Serve at once with syrup. Enjoy!
