1Definition
Establishment requirements – refer to any policy, procedure, process or agreed requirement, either written or oral, that is made known to the candidate prior to assessment against this unit standard.
2Candidates will be required to select an international cuisine that meets the requirements of their establishment and/or an agreed context. Candidates will be expected to source their own information for their analysis.

Outcome 1
Analyse an international cuisine in the hospitality industry.
Evidence requirements
1.1History and background of the international cuisine are analysed and described in terms of the factors that have influenced change to the cuisine.
Rangefactors may include but are not limited to – culture, geography, use, resources.
1.2Contemporary uses of the international cuisine are analysed and described in terms of production methods, techniques, and resources.
Outcome 2
Plan and present an analysis of an international cuisine in the hospitality industry.
Rangemethod of presentation may include but is not limited to – oral presentation, written presentation, visual presentation.
Evidence requirements
2.1Presentation is planned in terms of method, format, style and establishment requirements or an agreed context.
2.2Results of the international cuisine topic analysis are presented to stakeholders in accordance with establishment requirements or an agreed context.
