II.BRIEF DESCRIPTION OF THE COURSE CONTENT

Students will learn state mandated guidelines for food service; how to attain food handler training certification and perform front-of-the-house and back-of-the-house duties. Students will prepare quality food products and present them creatively; demonstrate safe, sanitary work procedures, understand food science principles related to cooking and baking and utilize nutrition concepts when planning meals/menus.

IV.STUDENT EVALUATION:

All work is graded on the 100% grading scale. Students will be evaluated by completion of various assignments in the following categories: class assignments, tests, quizzes, projects, group work, homework, lab activities and oral presentations. Summative assignments are 60% of the grade and formative assignments are 40% as calculated by gradebook.

V.HOMEWORK/ MAKE-UP POLICY:

If a student is absent from class for any reason, they are required to make up all missed assignments. If an assignment is due on the day of the student’s absence it is due upon the student’s return. The student has 2 days for each day absent to make up any missed assignments. It is the student’s responsibility to request the missed assignments.

VI.BEHAVIOR MANAGEMENT SYSTEM/CLASSROOM RULES:

I have identified four (4) tools to be successful. They are:

Be respectful, Be responsible, Be prepared and Be on time.

BE RESPECTFUL: The property and rights of your peers, school, and the teacher are to be respected. Defacing property and the use of profanity or derogatory remarks will not be tolerated. The student will respectfully follow all instructions made by the instructor. Students must raise their hand and wait to be acknowledged to ask or respond to questions. Students will be patient and will not criticize their peers’ reading skills or verbal answers. Students will enter and exit the class without disturbing others. All students must realize that each person is entitled to his/her opinion.

BE RESPONSIBLE: It is the student’s responsibility to be prepared for class by bringing their notebook with paper and pencil. Students will only use pencils. Pens are not allowed. In the event of an absence, the student is responsible for inquiring about missed assignments and tests. All school and county rules will be enforced in this class. Cheating will not be tolerated. Students are expected to do their own homework, classroom work and testing. All students will be on task during classroom time. No sleeping, head on desk, disruptive talking, note writing, or other subject studying will be allowed. No cell phone use or text messaging in class unless involved in BYOT . When announcements begin, students are to listen quietly. All students are to remain in their assigned seat until the instructor dismisses the class. The bell is not the dismissal. Students will follow all safety rules given in class. THIS IS A FOODS LAB. FOR THE SAFETY AND SANITATION OF OTHERS; NO COMBING, STYLING, OR PLAYING WITH HAIR. NO THROWING IS ALLOWED.

BE PREPARED: A 2 pocket folder or binder (in which all handouts, assignments, etc. must be kept), paper, pencils, eraser. All students will submit assignments with their name, class, period and date in the upper right hand corner of a clean sheet of paper. All students are responsible for keeping the area around them neat and clean. All students will be assessed a lab fee of $25.00.

BE ON TIME: All students are expected to be in their assigned seat before the tardy bell stops ringing. Students tardy to class should have a signed pass.
