CHEF PAUL CROASDALE CELEBRATES SLOW FOOD WEEK WITH MENU OF TOP LOCAL PRODUCE

Chef Paul Croasdale of Ynshir Hall Hotel, Eglwysfach, Machlynlleth, one of the Slow Food UK Chef Alliance members, is creating a wonderful menu to celebrate Slow Food Week, from June 18 - 24, to demonstrate his commitment and support for the Slow Food UK’s educational and charitable projects around the country

There will be a special Slow Food UK Forgotten Foods-inspired menu with tastings of Highland Park whisky (supporters of the Slow Food UK Chef Alliance) being served at his restaurant.

“Slow Food UK Week celebrates the many wonders of good British food. This year we will focus on our newest initiative, the Chef Alliance in which leading British chefs share their enthusiasm for local, sustainable ingredients and work with closely with our local Slow Food UKprograms.The Ark of Taste is our UK programme saving forgotten flavours and I am so pleased Chef Paul Croasdale has embraced saving our edible biodiversity.Our Chefs will champion Forgotten Foods with special Slow Food menus, share their insights in vibrant and informativetalks, and open their doors for the first ever Slow Food Canapé Crawl.” says Cat Gazzoli, CEO of Slow Food UK.

Paul has chosen to use delicious local ingredients including Borth Bay Lobster, Rhug Estate Organic Pork and foraged dandelion, burdock and mint: “Come and celebrate with us and see how the philosophy of Slow Food embraces and empowers both food lovers and producers,” he says.
