STA Concession Closing Check List

Start after 2nd period rush.

Dishwashing
  1. Fill left sink with soapy water, middle sink with rinse water and right sink with a few dashes of sterilizing solution & water

Hot Dog Cooker:
  1. Remove all hot dogs from cooker and throw/give away note on the waste log located in black concession binder on back table.
  2. Turn off machine with “on/off” switch
  3. Take a clean warm wash cloth and wipe down the rollers while they are still warm.
  4. Ensure there are 4-5 packs of buns and good supply of hot dogs in the refrigerator for next game. If none look in freezer for buns and hot dogs.

Pretzels
  1. Turn off after all product has been sold or after the 2nd period rush. Both buttons down
  2. Wipe down inside of machine with wet cloth.
  3. Note any pretzels given/thrown away on the waste log.

Nachos:
  1. Leave on if there is another game this weekend or within a few days. If not upplug until the next week.
  2. If you’ve unplugged, take the cheese bags out of the machine and place in back Pepsi cooler.
  3. Clean the bottom portion of the cheese machine with a warm cloth

Cappuccino/Cocoa Machine
  1. Fill with product if needed.
  2. Remove the holding tray and wash in sink after every game.
  3. Clean above the back side where the tray slides in and out with a warm cloth every game.
Note: nothing to turn off.
Regular Coffee Machine
  1. Turn off coffee machine.
  2. Throw away all extra coffee
  3. Take all pots and clean in back while doing dishes.
  4. Wipe down entire area.
  5. Stock with 12 oz. Caribou cups and lids.

Slushie Machine:
  1. If needed place additional premixed product into machine – Look for Min Level line on machine, if mix is close to line add additional product.
Use premixed containers found in back cooler top shelf.
(Do not add straight base to machine base must be pre-mixed with water) see concession opening directions on how to make slushie premix.
  1. Remove both bottom holding trays and clean with dishes in back
  2. Replace after being washed.
Note: Do not turn off machine
Popcorn Machine
  1. Turn off machine. (all buttons down)
  2. Bag up popcorn and give away and note on waste log.
  3. Use paper towels to wipe out loose pieces and kernels into the holes of the bottom tray.
  4. Empty and wash metal drawer at the bottom of the machine that collects unpopped popcorn kernels.
  5. Wash off popcorn scoops and store with other clean utensils.

Register
  1. Take out all money from register except change. All change stays in register. No change will ever need to be counted. (loose or rolled)
  1. Count out $150.00 (in 1’s, 5’s, and 10’s and put back in register. See sheet above register for suggested amounts of each denomination. No $20.00’s should be left in register. All quarters stay in register.
  1. Record the date, the amount left in register, and your name on the register log located behind the candy display (brown table)
  1. Once $150.00 is placed back in register, all remaining money is the closing deposit. All $20.00’s should be deposited along with any 1’s, 5’s and 10’s not part of the $150.00 in the register. Add up remaining bills and place in envelope located on brown table behind candy stand. Log the date, deposit amount, and your name on the envelope. Then log the same information on the “Deposit Log” sheet
  1. Once both the envelope and log sheet have been filled out properly, seal envelope and put in slot on top of safe.
  1. Return to register and turn key to “Z” report”. Then press the “Z” report programmed button on the register. Report should print out on receipt paper. ~when report is finished printing, tear from register and place “Z” report in z report envelope.
  1. Remove key and place in silver tray of Hot Coco machine.

Restock Pop
  1. Shift cold pop from left side to the right side of cooler.
  1. Stock the pop on the left side to chill.
  1. Pop must be rotated
  1. Take product from back stainless steel cooler to restock front.
  1. After front cooler has been stocked. Fill back cooler with warm product. (if any)

Concession Door
  1. Bring in blue condiment ledge from out front and set on main counter.
  1. Close concession door and lock with key from drawer on table behind register.

Other
  1. Put condiment items in cooler. (Ketchup mustard). Fill napkins if necessary.
  2. Pull the signs from the 3 vending machines and make sure to turn back on the breakers in the fuse box.
  3. Do a visual check of product and write down what product you think we are low on.
  4. Wipe down counters.
  5. Sweep floors.
  6. Mop floors
  7. Write down any items that are running low on the ordering log.
  8. VERIFY AGAIN THE BREAKERS FOR VENDING MACHINES HAVE BEEN TURNED BACK ON.
  9. Turn off all lights.

VERIFY CONCESSION DOOR IS LOCKED WHEN YOU LEAVE. IF NOT GET KEY FROM BLACK MAGNETIC CASE LOCATED BEHIND THE POP VENDING MACHINE CLOSEST TO THE CONCESSION DOOR. LOCK DOOR AND REPLACE KEY.
