ArrozCaldosod’Manchego

1 cup ofpaella rice
200g chicken breast
1 red pepper
1 green pepper
1 can tomatoes
200g mushrooms / / /

200ml olive oil
3 garlic cloves
Large pinch of saffron
2 chicken stock cube
Salt and pepper
1 lemon / / /
______/ ______/ ______

Chop the peppers and the mushrooms.

Heat the oil in a deep saucepan but don’t let it get too hot.

Add the garlic cloves whole and cook for 3 minutes to flavour the oil.

Add 2 or 3 tinned tomatoes and mash them in the oil.

Add the chopped vegetables and cook for 10 minutes.

Now add the chopped chicken and the rice.

Add 2 cups of water, 2 stock cubes and a large pinch of saffron.

Cook for about 30 minutes. Keep checking the water and add some if necessary.

Taste and add salt and pepper.

Serve as a thick soup with a squeeze of fresh lemon.
