Go through this list and write down a binary (on/off) and continuous sensor for each physical gesture. Be as specific as you can. Here’s an example:

Of course many of the gestures will use the same sensors. And if you want to list more than one sensor for a gesture, feel free.

Consider: switches including proximity and tilt; variable resistors of various kinds; IR distance sensors; force-sensing resistors; bend sensors; piezoelectric sensors; accelerometers; biopotential sensors; capacitive sensors; photocells; thermostats; strain gauges; microphones; or cameras.
