Required Personal Protective Equipment: Chef Jackets, aprons, hair net and chef hat.

GENERAL NOTES: No nail polish, gel nails, jewelry (including watches), cell phones, or music devices allowed in the kitchen. Hair must not be visible outside of the hair net or chef's hat.

1 / The dough sheeter must be placed on a solid horizontally leveled surface. / Tipping Machinery
Crushing Injury / Make sure machine is placed on a stable and solid level surface.
Inspect cord for wear or damage. Inspect that guards are in place and in working order. Lock out if damaged and report to instructor. Do Not Use if guards or cords are damaged. / Electric Shock
Crush/Pinch Points/Amputation / Lock out if damaged and report to instructor. DO NOT USE IF CORD OR GUARD IS DAMAGED.
It is forbidden to remove, modify or damage the security bars (guards) of the machine.
Set the table canvas. Make sure the drive lever switch is in the center (neutral) position.
Put the general switch in position I and press the green start button labeled “I”.
Pull the manual driving lever down or up to activate the canvas. The center position is neutral.
The long blue lever on the side controls the opening between the two cylinders, so you can obtain different dough thickness.
Select the desired speed using the arrow buttons as per teacher instructions.
To stop the machine, you have to put the driving switch in central position and then, press the red stop button labeled “0”.
Alternatively, you can press the emergency “STOP” button, or lift the safety guards which will stop the entire machine immediately.
To restart after an emergency stop, twist out the emergency button, then press the green star button labeled “I”.
When your work is complete turn off the general switch. / Do not leave the machine running unattended.

Cleaning:

2 / Always unplug the machine before cleaning.
To clean the cylinders, do not use knives, sandpaper, metallic objects, hard brushes or any tools that may damage its surface. You may use plastic tools or soft sponges.
To clean the canvas, use a soft brush.
Do not use toxic products, solvents, abrasive agents or any product that may damage the surfaces or the dough’s composition.
Before switching the machine on, make sure that nothing has been forgotten on the machine.
