INSTRUCTIONAL GOAL

The aim of this instruction is to assist people age 21 and over in developing a greater appreciation for the different characteristics and types of red wine.

NEEDS ASSESSMENT

A survey was conducted to find people interested in learning more about red wine, its varieties and characteristics. The target audience consists of wine drinkers who consume one or more glasses of wine a week and would like to increase their knowledge of red wine.

Data Collection

Data collection was conducted via survey in the wine department of a local grocery store. The sampling was conducted over a two-day period.

Data Analysis

The data collected was analyzed to determine respondents’ familiarity with the different types and characteristics of red wine; in addition, to their consumption practices (how often they drink, alone or social).

Results: The findings showed that 61% of those surveyed reported drinking wine one or more times a week. Seventy-nine percent of respondents placed their knowledge of red wine varieties and their characteristics at beginner or no knowledge with 70% expressing a desire to learn more about red wine.

Final Report

Commonalities were evaluated to identify and formulate the focus of the instructional materials.

The target audience is both male and female. They are 21 years of age or older and culturally diverse. All drink wine one or more times a week and would like to know more about the characteristics and types of red wine.

TASKS ANALYSIS

Procedural Analysis

·  Prepare for a Tasting

o  Retrieve wine glass

o  Pour wine in wine glass

·  Look at wine

o  Note wine color

o  Note wine opacity

·  Smell wine

o  Gently swirl wine in glass

o  Sniff wine

o  Note aroma (fruit, flowers, spices)

·  Taste wine: Identify the nuances that differentiate red wines

o  Take a small sip of wine

o  Roll it around on the tongue

o  Take a small breath of air allowing the wine to mingle with the air

o  Note flavors: (berry, spicy, fruity)

o  Note initial impression of wine

o  Note how long the flavor lasts after it is swallowed

o  Note whether the finish (body) was like water (light-bodied) or like milk (full-bodied)

Topic Analysis - Major Characteristics to Note during Tasting

·  Cabernet Sauvignon

o  Flavor: Distinctive black currant flavor with a hint of mint

o  Body: Ranges from medium bodied to heavier, full bodied

o  Style: Well rounded and high in tannin content

·  Merlot

o  Flavor: Juicy, fruity flavors of black currant, black cherry and mint

o  Body: Soft often complex texture

o  Style: Lower in bitterness than Cabernet Sauvignon

·  Pinot Noir

o  Flavor: Predominantly raspberry and strawberry flavor

o  Body: Ranges from medium to light bodied wines

o  Style: Complex and silky to plain and insipid styles

INSTRUCTIONAL OBJECTIVES

At the end of the course students will be able to:

·  List the five most popular red wine types discussed in the course excluding red wine blends

·  Describe the characteristics of the five different red wines discussed in the course, excluding red wine blends

·  Identify each of the five red wines (discussed in the course) during a blind taste test

INSTRUCTIONAL APPROACH

The instructional approach will be a combination of wine tasting and paper-based instruction. The learner will learn to identify the characteristics (sight, smell, taste) of Cabernet Sauvignon, Merlot, Pinot Noir, Zinfandel and Shiraz using wine tasting during course instruction.

EVALUATION

Formative Evaluation

Designers will present the instructional wine content characteristics and the wine tasting procedures to the subject matter expert to ensure correctness in content and procedure.

Summative Evaluation

Participants will demonstrate the proper procedure for tasting wine, and, based on the characteristics introduced by the instructor at the beginning of the course, will then list the style, flavor, and body elements they recognize in each variety. As a separate measure, participants will name each type of wine during a blind taste test.

Confirmative Evaluation

Six months after the course, participants will be invited to attend a wine tasting where the instructor will observe whether they demonstrate the proper wine tasting techniques in a social setting. Also, they will describe the characteristics of each of the five red wine varieties using open-ended questions during conversation with instructors and other participants. In addition, participants will be asked to self-report on any changes they’ve noticed in their selection of red wine.
