DAILY OPERATIONS & CLEANING SCHEDULE

MONDAY/WEDNESDAY

A. DISHROOM: You will be responsible for thesetupof the dishroomas instructed by Chef Instructor or Assistant Chef Instructor; learn where everything goes in the Modular Kitchen; and how to successfully securethe Dishroomwhich will prepare you for real work experience! Clean all surfaces at dish station that includes the Garde Manger Lab three-sink compartments as well. Return equipment and dishes to correct places and leave the Dishroom clean, spotless and ready for the next class or shift.

B. STEWARDS (A): Reorganize and consolidate products on mise en place and spice cabinets, and organize dry storage shelves. Help put away dishes, smallware, utensils, etc. from the Dishroom.

C. STEWARDS (B): Reorganize and consolidate products in reach-in refrigerators (low boys), all walk-ins and freezerin Garde Manger Lab. Wipe all stainless steel areas of the walk-ins and freezer. Help put away dishes, smallware, utensils, etc. from the Dishroom.Help put away dishes, smallware, utensils, etc. from the Dishroom.

D. SWEEP / TRASH: Sweep entire kitchen after counter tops are cleaned of debris. Throw trash out when you see that trash needs to be thrown out.Help put away dishes, smallware, utensils, etc. from the Dishroom.

E. STOCKS: Put up and drop stocks as needed (if any). Check to see if all food are cooled, labeled and stored properly in reach-in refrigerators and walk-in. If there are no stocks to drop, divide your Team in two and help in performing A, B and C tasks during clean up only! See A, B & C.
