Block beef description

The block form is a rectangular parallelepiped.

The block size is length 65 cm / width 40 cm / height 10 cm

Raw materials for the block meat:

1. Extra class trimmed beef - muscle tissuewithout visibleinclusions ofconnective andfatty tissue.

2. First class trimmed beef - muscle tissuewith a mass fractionof connective and fat tissueno more than 6 %.

3. Second class trimmed beef - muscle tissuewith a mass fractionof connective and fat tissueno more than 20 %.

4. Single class trimmed beef - muscle tissuewith a mass fractionof connective and fat tissueno more than 10 %.

Each blockof thetrimmedmeatis packedinto polyethylene filmbags and markedwith alabelindicating:

-manufacturer’s trademark;

-name and class;

-net weight;

-identification bar code;

-date of production;

-storage conditions;

-shelf life;

Characteristics:

of the adult cattle: muscles are developedsatisfactorily; acanthas, ishialtuberosities and whirlbones don’t protrude sharply; subcutaneous fat covers the carcass from the 8th rib to ishialtuberosities, there are significant gaps; there is fat storagein smallportions in neck, shoulder blades, front ribs, thighs, pelvic cavity and groin area.
