Bacon-Potato Burritos

INGREDIENTS:

1 lb. bacon

3 C. frozen style hash browns

1 T. and 1 tsp. dried minced onion

8 eggs

½ C. milk

2 tsp. Worcestershire sauce

½ tsp. salt

½ tsp. pepper

2 C. shredded cheddar cheese

12 (8 in.) flour tortillas

DIRECTIONS:

  1. Cook bacon until crisp in a sauté pan. When crisp take out and drain on paper towel.
  2. Brown potatoes and onions in drippings.
  3. In a bowl beat eggs, milk, Worcestershire sauce, salt and pepper. Pour over potatoes and cook and stir until eggs are set.
  4. Crumble bacon and stir into potatoes and sprinkle in cheese and stir until melted.
  5. Spoon egg mixture down into center of tortillas and fold in sides.

Dessert Breakfast Pizza
INGREDIENTS:
1 storebought pizza dough
2 tablespoons butter, melted
1 tsp. cinnamon
2 T. sugar
2 cups cream cheese
1 tablespoon heavy cream
2 tablespoons lemon juice
1 teaspoon lemon zest (from 1 lemon)
¼ C. powdered sugar
2 cups mixed berries
Directions:
  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. Roll out dough to 1/4 inch. Transfer the pizza dough to the lined baking sheet and brush the dough with the melted butter. Combine cinnamon and sugar together and sprinkle the dough with cinnamon and sugar. Bake for 13-15 minutes.
  3. Meanwhile, in a medium bowl, mix together the cheese, cream, lemon juice, zest and powdered sugar.
  4. Spread the cheese mixture over the cooled crust.
  5. Slice berries and top cheese mixture with berries. Slice like a pizza and serve.

Breakfast Pizza
Ingredients:
4 eggs, lightly beaten
2 tablespoons butter
2 (8-inch) pizza crusts (recommended: Boboli)
1 tablespoon extra-virgin olive oil
2 cups shredded jack cheese blend (recommended: Colby)
4 fully cooked sausage patties, crumbled (recommended: Jimmy Dean)
1/4 cup shredded Parmesan
1 medium tomato, diced
1 teaspoon Italian seasoning
Directions:
1. Brush pizza crusts with olive oil and sprinkle with Italian seasoning.
2.Melt butter in a sauté pan and scramble eggs and set aside.
3. In another sauté pan, cook sausage until no longer pink and drain on a paper towel to get out excess grease.
4. Layer pizzas with scrambled eggs, cooked sausage, tomatoes, shredded jack cheese and parmesan cheese.
5. Heat oven to 425 degrees and bake pizzas for 12-15 minutes.
Breakfast Casserole
Ingredients:
6 eggs
1 cup half and half
2 tablespoons green onions, chopped
Salt and pepper
Butter to grease pan
6 slices of Texas Toast (thick cut, crusty white bread)
1 pound spicy pork sausage, cooked and drained of fat
1 cup grated Cheddar cheese
In a small bowl, beat the eggs until they loosen up. Add the half and half, and green onions. Mix well, highly season with salt and pepper and set aside.
Directions:
1.Butter a 9 by 13-inch baking pan. Line the pan with the bread, cutting and rearranging, if needed.
2.Sprinkle the bread with the cooked sausage and cheese. Pour the egg mixture over the entire pan. Cover and refrigerate overnight.
3.Preheat oven to 350 degrees. Cook covered for 25 to 30 minutes or until the egg mixture is set.
Italian Breakfast Skewers
INGREDIENTS
Toothpicks
1/2 pound sweet Italian sausage, cut into 2-inch pieces
1 red pepper, cored and cut into 1-inch squares
1/4 pound ham, cubed
1/2 cup pineapple cubes, fresh or canned
Preheat the oven to 375 degrees F.
Thread the skewers starting with the sausage, then the red pepper, then the ham, then the pineapple. Each skewer should have 2 of these sets. Continue with the rest of the skewers.
Arrange on a baking sheet and bake until golden brown on the edges and the ham is cooked through, about 25 minutes. Serve warm.
Hash Brown Quiche
Ingredients:
3 C. shredded has brown potatoes
1/3 C. melted butter
1 C. diced cooked ham
¼ C. chopped onion
1 C. shredded cheddar cheese
2 eggs
½ C. milk
Salt, pepper, and seasoning salt to taste
Directions:
  1. Preheat oven to 425 degrees
  2. Spray 9 in. round pie dish with nonstick spray. Press hash browns into the bottom and sides of dish. Drizzle with melted butter and sprinkle with seasoning salt. Bake in preheated oven for 20 minutes.
  3. In small bowl combine ham, onion, and shredded cheese. In separate bowl, wisk together eggs, milk, salt and pepper. When crust is ready spread ham mixture on bottom and cover with egg mixture.
  4. Reduce oven temperature to 350 degrees. Bake for 20-25 minutes until filling is puffed and golden brown.
