Objective

I desire to find a long term employment in the Restaurant/Bar Industry. I aspire and inspire the dinning public with the care I feel towards food quality and customers service. I wish to expand the horizons of diners in such a way that amazes all involved in the experience. Utilizing my talent of 23 yrs as an organizer, trainer and best of all a leader. I intend to further the program of the industry and foster the next generation of caring employees.

2010 to present – G.M, Wing Daddy’s Lee Trevino. Training Store

Staff of 64 Employees and 2 Assistant Mgrs. Train all GM’s and Asst Mgrs coming in to our company from BOH to FOH and Admin training. running good PNL’s of 29 to 34% profits. Al schedules FOH & BOH. Inventories the 15th and the end of the month reports. Purchasing all products from food to beer and alcohol. 75% food and 25% liquor, beer and wine. PNL profit at 34% and labor at 10.30%. sales month from 250.000 to 275,000.

2008-2010 Mulligan’s North G.M. El Paso, Texas

Handled 25 employees including, PNL’S, schedules, labor 9%, inventories, food cost 26%, promotions and BOH and FOH Mgr. 75% liquor 25% food. Monthly sales $1025.000 to $1030.000

2001-2008 Texas Wings (HOOTERS) Mgr.. Frisco Tx.

Handled 75 Employees including the BOH and FOH scheduling, labor 19%an 28% food cost. Targets, inventories, food cost & promos. Monthly sales $250.000 to $275.000.

1994-2001 Owens Restaurant (farmer’s branch) G.M. Dallas Tx

Managed and supervised a successful restaurant in Farmers Branch. Handled a staff of 85 employees that included BOH and FOH. Labor 26% food cost 29%. Did scheduling, targets, inventories, promos and the ordering. Monthly sales $200.000 to $2025.000

Personal Strength

I have 28 years of experience and knowledge and managed some of the best Restaurants in the states. During my career I have gained formidable knowledge of etiquette and procedures in the business and service as well. I take tremendous pleasure in molding employees in a tuff situation and make them understand the principle of customer service. I pride myself in the ease that comes naturally with the care that I give each and every customer.
