Cheese Notes

LINCOLNSHIRE POACHER- (Cow’s Milk) -This classic style cheddar cheese is produced by the Jones family at Neals Yard Dairy near Alford. It has a rich long lasting flavour with sweet, nutty notes & a sharp tang that sometimes tastes a bit like pineapple. The texture is smooth, close, dense & creamy

SOMERSET BRIE – (COW’S MILK) –This cheese is produced by Lubborn Creamery, which is nestled in the valley of Cricket St Thomas, South Somerset. The cheese is traditionally ripened, which means the cheese gradually softens during the four weeks after its wrapped. It has a superior creamy taste, a rich texture and is soft with an edible white rind.

GOLDEN CROSS- (GOATS MILK) -This goat’s cheese is produced by the Golden Cross cheese company in East Sussex. The cheese is lightly charcoaled prior to maturation. When young the cheese has a fine firm silky texture with a fresh citrus flavour. As it matures it then becomes denser and creamier.

HARROGATE BLUE- This golden bodied blue cheese is produced up in Thirsk by Shepherd’s Purse dairy from cow’s milk. This relatively new cheese has delicate blue veins, is soft & creamy & has a mellow blue flavour with a hint of pepper. It has a lovely orange flesh colour for appearance.
