1. Why to clean tanks and sensors
· If a monthly boil out was not realized, a layer of carbonized particles deposits on the sensor and the sensor shows values higher and higher, or does not measure anything or indicates «water»
2. When to clean tanks and sensors
• Clean tanks and sensors at least once a month
• Curative: when the shown values are too high or when «water» is indicated on the system
3. Cleaning procedure
• Use the cleaning kit Alpsens containing
– a soft brush to clean the electrodes
– a spatula to clean between the two plates
– 1 pellet «ClearTab» for 12 l water
Realize this operation on Saturday late afternoon or before a day of closure, to allow the product to take good effect
A) Emptying and put water
· Switch off the deep fryer
· Empty the oil of the deep fryer
· Put tap water into the oil tank or directly into the tanks
B) Boil out
Put into the water-filled tank
· 1 pellet «ClearTab» for a small tank until 12 l or
2 pellets for more than 12 l
· Heat up the deep fryer until 100°C
C) Heat up between 40 and 60 min at 100°C
Stir regularly every 20 minutes
D) Leave the sensors in the water during almost one night
E) Cleaning of the sensors
· External : clean the sensors at cold on each side with a soft brush in order to remove the deposited layer
· Internal : clean the sensor inside with the spatula, if necessary. The whole layer must be removed.
Tricky operation – don’t twist the sensor!
F) Clean the heating radiators with a sponge type Spontex
G) Restart
· Throw the cleaning water
· Reput oil into the tanks
· Heat up the oil
PS: the sensors being wet, a certain time will be necessary to let them dry in the hot oil. After 15 minutes of cooking, Clearfry 2™ becomes again operational.
