Primary Purpose of Role
· To support the Senior Cider Maker in ensuring efficient and high quality manufacture of Bold Rock’s range of products, from fermentation through to final blending and bottling
· To act as effective back up to the Cidermaker
· To assist where required in promoting our ciders in store, and at trade and public festivals

Key Decision Making in this Role:
· To make decisions on cider production and other products in consultation with the Cider Maker as appropriate
Key Responsibilities/ Accountabilities:
· Cider Making/Fermentation/Blending/Bottling
o To assist the Cider Maker in winery duties when and where required
o To actively seek opportunities as they arise to learn from the Cider maker in regards to Cider making duties
o To support the Cider maker in ensuring that all products meet the set quality specifications
o To ensure that all requirements of our food safety policy and other statutory regulations are adhered to
o To ensure that the Cider Maker is informed immediately of any product that does not meet specifications
o To ensure accurate record keeping of all procedures and processes
o To ensure the cidery area is kept clean and tidy at all times
o It will be your responsibility to learn how each piece of plant and equipment in your area of operation work and how to get the best performance safely from each unit
· Day to Day Duties will include, but not restricted to:
o Yeast inoculation and fermentation
o Monitoring and controlling fermentation
o Racking, fining and quality control during bulk storage
o Sensory evaluation of products prior to, and during bottling/kegging
o Blending, filtration and bottling
o Laboratory testing at all stages
o Ensuring cidery and all equipment are hygienically clean
o Record keeping, planning, ordering of raw materials and dry goods
o Following a Health and Safety Program

o You will be charged with helping ensure the production unit works as a team and there is a seamless flow from juicing to fermentation, blending and bottling
o You will need to work within the Bold Rock team to foster good relationships to help ensure a healthy, effective, and efficient working environment

o You will need to foster a safe working environment and ensure that at all times you and those around you comply with all Bold Rock Health, Safety and Environmental regulations and policies
o To promote the use and revision of our existing Health and Safety program
o You will immediately bring to the attention of management any identified or potential hazards that need to be registered
o This will also include the promotion of a safety culture at all times

o Although the tasks above will remain your core responsibilities from time to time you will be required to assist in other areas of the Company’s business

· Eventually being in sole charge of the cider making operation in the absence of the Cider Maker
Qualifications and Experience:
Qualifications: / · Suitable qualification in Wine/cider making (or brewing)
· An aptitude for working with machinery
· Disciplines of attention to detail and accurate recording
· Basic knowledge and aptitude for laboratory work
Experience: / · Some practical experience of winery or brewery procedures
· An understanding of and willingness to learn Laboratory skills
· Good mechanical skills and practical application of knowledge
· HACCP
