Brick Oven Pizza
MISE EN PLACE:
Basic Pizza Dough:3 tbsp / Sugar
1 tbsp / Salt
4 ½ tsp / Olive Oil
1 cup plus 2 tbsp / Warm water
3 cups / Bread flour
1 ½ tsp / Yeast
3 tsp / Olive oil, plus extra for pizza crust
Flour for dusting the pizza peel
Pizza Sauce:
16 oz / Tomato puree
1 tbsp / Olive oil
1 clove / Garlic, minced
¼ tsp / Oregano
¼ tsp / Basil
Salt and pepper to taste
Day 1: Make the pizza dough

Day 2: Bake pizza on pizza brick
DAY 1:
Basic Pizza Dough:
1. Place the sugar, salt, olive oil, water, 1 cup of the flour, yeast into the mixer’s workbowl. Using the paddle attachment, start the mixer on low and mix until the dough just comes together. Add 1 cup of flour. Mix until just comes together. Slowly add the 3rd cup of flour, just until the dough comes together, forming a ball. Change to the dough hook and knead on medium speed for 15 minutes.
2. Tear off a small piece of dough and flatten into a disk. Stretch the dough until thin. Hold it up to the light and look to see if the baker’s windowpane, or taut membrane, has formed. If the dough tears before it forms, knead the dough for an additional 5 to 10 minutes.
3. Place the dough on a lightly floured bread board and roll into a smooth ball. Place in a ziplock bag and refrigerate for 24 hours.
Pizza Sauce:
1. Sauté garlic in oil over low heat. Add tomato puree and seasonings. Simmer for 30 minutes on medium heat. Cool. Put in a ziplock bag, label with your period and kitchen number, and refrigerate 24 hours.
DAY 2:
1. Place the pizza stone onto the bottom rack of the oven. Preheat to 450 degrees convection.
2. Split the pizza dough into 3 equal parts using the dough scraper. Flatten into a disk onto the countertop. Lightly sprinkle flour on the bread board. Using your hands, form a lip around the edges of the pizza. Stretch the dough into a round disk, rotating after each stretch. Toss in the air if you dare. Cut a piece of parchment paper the size of the pizza. Place the dough on the parchment paper. Brush the rim of the pizza with olive oil. Spread the pizza sauce evenly onto the pizza. Sprinkle with choice of toppings and cheese.
3. Slide the pizza and parchment onto the pizza brick using the pizza peel. Bake for 7 minutes, or until bubbly and golden brown. Slice and enjoy!
