Quick, Easy, and Healthy Cranberry Recipes

Check out these healthy recipes that help incorporate more cranberriesinto your diet! They are simple and can all be made in 10 minutes or less—most are even dorm-room friendly!

Breakfast

Antioxidant Boosting Cranberry Green Smoothie

½ cup cranberries

½ cup blueberries

1 banana

1 cup kale

11 oz coconut water

  • Blend all ingredients and enjoy!

Cranberry Pistachio Energy Balls

¾ cup dry oats

½ cup chopped dates

¼ cup honey

½ tbsp. ground flaxseed

½ cup pistachios

½ cup cranberries

¼ cup white chocolate chips (optional)

  • Combine dates, honey and flax seeds in blender/food processor and pulse until smooth. Add more honey if mixture is too thick
  • Pour mixture into a large bowl and mix in the oats, pistachios, dried cranberries, and white chocolate chips
  • Cover and refrigerate for 30 min
  • Once mixture is cool, use a spoon to make your desired size of energy balls
  • Store in refrigerator for up to 2 weeks!

Lunch/ Dinner

Cranberry Pecan Salad

2 cups mixed greens

2 tbsp. feta cheese

2 tbsp. dried cranberries

2 tbsp. pecans (raw or candied)

Balsamic vinaigrette (as much as you need)

  • Toss all ingredients together and enjoy!

Cranberry Chicken Wrap

1 cup shredded chicken breast

1 cup chopped apple

1/4 cup dried cranberries

1-2 tbsp. mayo

1/2 cup spinach

1 whole-wheat tortilla

  • In a small bowl, mix chicken, apple, mayo, and cranberries
  • Place mixture above on whole-wheat tortilla, top with spinach and enjoy!

Cranberry Almond Wild Rice

1 (6 oz.) package wild rice

1 (3.5 oz.) bag quick cooking brown rice

3/4 dried cranberries

1/3 cup slivered almonds

  • Prepare both bags of rice as instructed on package and mix them together
  • Mix in cranberries and almonds and enjoy!

Desserts

Cranberry-Pistachio White Chocolate Bark

8 oz chopped white chocolate

1/2 cup dried cranberries

1/3 cup chopped pistachios

1/4 tsp. sea salt

  • Place chocolate in microwave safe bowl and microwave for 15 seconds, take out and stir. Repeat this process until all the chocolate has melted
  • Set aside 1 tablespoon of cranberries and pistachios
  • Stir in remaining cranberries and pistachios into chocolate
  • Spread mixture onto parchment paper in an even layer, then top with reserved cranberries and pistachios and sprinkle with sea salt
  • Refrigerate for about 1 hour, break into bite-size pieces, and enjoy!
