We are hoping you might want to attend this year’s special 10th Annual State Championship in Albert Lea, Minnesota We are hosting a sanctioned STEAK COOKOFF ASSOCIATION (SCA) contest Friday night. This event will be separate from the KCBS event. Any registered KCBS contestant can enter the SCA event for only $75.00. The rib eye steaks ARE FURNISHED. World Food Championships qualifier in Chili, BBQ, Dessert and Steak.

  1. We are offering total prize money of $10,200. The payout is to TEN PLACES IN ALL CATEGORIES (EXCEPT OVERALL). There will be free entry of the 4 meats for 2018 for the Mid Range team and the Newbie (new to BIB) team TO BIB.
  2. Payout for Overall KCBS Champions is $3,400 and paying thru the 5th place and trophy: $1,500 for 1st, $1,000 for 2nd, $500 for 3rd, $300 for 4th and $100 for 5th.
  3. We are offering $4,800 total for the ten places in the four meats.
  4. We are offering $500 each in prize money for Friday night judged awards for Chili, and sauce. There will be a judges’ panel for the cash awarded for chili and sauce. The public will determine the winners for the trophy for the chili and cash prizes of $100 for 1st; $75 for 2nd; $50 for 3rd. This way the cash awards are given to cooks anonymously judged by a panel.
  5. We are offering $500 each in prize money for Saturday turn-ins for sausage (sponsored by CARGILL) and desserts. Saturday schedule is attached. TIMES SUBJECT TO CHANGE.
  6. SCA event turn in is Friday night. Steak grand champion qualifies for the SCA World Steak Competition in Fort Worth, TX and the WORLD FOOD CHAMPIONSHIPS in 2017. The total payout for steak and appetizer is $2,600. It pays five places for steak: $1,000 for 1st, $500 for 2nd , $400 for 3rd , $300 for 4th , $200 for 5th; pays 3 places for appetizers: $150 for 1st, $100 for 2nd, and $50 for 3rd.
  7. In order to win added money in any SCA event you will need to be a member of SCA in good standing in 2017. Added money is a benefit for the members of SCA.
  8. KCBS Grand Champion gets invited to Great American Royal Barbeque in Kansas City. They also are in the draw for the 2018 Jack Daniel’s World Championship. BBQ and are Qualifiers for the 2017 World Food Championships in November. The qualifiers are required to pay all their own expenses/fees to the World Food Championships, SCA, Jack Daniels BBQ, and American Royal.

All the categories other than the 4 meats are “anything goes” when it comes to cooking and presenting. All the categories of chili, sauce, sausage, and desserts can be prepped or prepared in advance.

CHILI: PEOPLE'S CHOICE AWARD

You cannot enter the chili competition for cash prize unless you are willing to serve the public. Please prepare 4 or 5 gallons. You will receive cups to serve the chili from your cooking area. Anyone with a spoon can be served. The public will have votes to deposit in a bucket (which we will also furnish) at your site. Public tasting of chili begins at 6:00 pm on Friday. The closed judging of the chili by KCBS judges will be held at 6:25 pm. This judging is for the cash part of the award. Peoples' choice in chili is for trophy and $100 FOR 1ST, $75 FOR 2ND, AND $50 FOR 3RD.

Designation of finalized cooking time and turn-in time will be provided to each competitor during on-site registration. There will be six (6) KCBS judges per entry. All competitors are required to compete in People’s Choice on Friday; however the overall BIB score is not affected by the results of People’s Choice. This means there will be SIX (6) sample cups, ramekins or small dishes for the judges to score on taste. All of these items, regardless of how the competitor wants to plate them, MUST fit on a standard silver platter that is issued by BIB officials.

DESSERT:

All turn in tray presentations require: ONE (1) primary sample for presentation and appearance, and SIX (6) sample cups, ramekins or small dishes for the judges to score on taste. All of these items, regardless of how the competitor wants to plate them, MUST fit on a standard silver platter (15” x 21” oval tray) that is issued by BIB officials.

When entries are turned in, they are renumbered and delivered to the judges as quickly as possible to maintain temperature integrity.

Designation of finalized cooking time and turn-in time will be provided to each competitor during on-site registration.

BIB is NOT responsible for any loss or misplaced dishes or garnish. You can pick up your dishes or garnish at the turn in area after all judging is done.

SAUCE:

A container will be provided. The sauce will be judged by 100% KCBS certified judges. Judges will use a plastic spoon or will pour the sauce on to judging plate and non-seasoned pulled pork butt will be available for each judge to dip into the sauce. Sauce can be turned in hot or cold. Not a People’s Choice category.

All presentations require 6 samples in a clam shell where the lid should close.

ALL competitors will cook and compete at the same time. Designation of finalized cooking time and turn-in time will be provided to each competitor during on-site registration. IF USED, MAKE SURE TOOTHPICKS ARE VISIBLE. A judge biting a toothpick WILL hurt your score.

The Sausage competition entry can be prepared in any manner. This sausage sample can be fried, barbequed, smoked, etc. provided it can serve 6 Judges. Meat can be removed from its casing if so desired for use in preparation. The Sausage entry is judged for Presentation, Taste and Creativity.

KID’S QUE:

Each entry will be judged by a panel of 6 judges. Each box should have enough samples for a minimum of six judges. There will be 2 age groups: 7-10 and 11-15. Each entry will consist of only 1 cook. KCBS rules apply for meat, seasonings, sauce, and presentation. Grills and meat will be provided. Hot dogs (sponsored by CARGILL) will be the meat entry for age group 7-10. Hot dogs (sponsored by CARGILL) will the meat for age group 11-15. Cooks will be provided their meat for their category and it must be kept chilled in a cooler for safety reasons. The child/cook must do the preparation, cooking and presentation. The adult supervisor/staff will help with fires. Special needs children need not be eliminated from the competition but will be allowed to do as much as they are able with some help from an assigned person. No garnish is allowed for the age group 7-10. Anything goes when presenting your entry for 11-15 age group. Hot dogs may be served in any manner. All children will cook in designated areas and do as must as possible by themselves. Age group 7-10 will be allowed only 1 adult helper, but should strive to cook by themselves as much as possible. Age group 11-15 will be cooking by themselves. Staff/ supervision will be available to assist if we see that the situation requires it. Tables will be provided for work space. Each cook needs to bring utensils, rubs, sauces, and hot dog seasonings. All items must be in place at the designated times of grill starting. Child/Cook must be standing in the “Turn In” area by the designated times to have their entry accepted. Hot dog entries will consist of a package of hot dogs for both groups.
