Waste Tracking Compliance

Compliance is measured on the data entry of waste into the Waste Tracker of all three types of waste; production, service, and storage. Compliance is calculated by taking the total number of days that had waste data entered and dividing it by the total number of days that required waste data. Waste data must be entered daily, however there is a three day lag time window. Waste for the week must be entered by Wednesday before midnight. The waste tracking compliance report is run on Thursday morning of each week.

3 Types of Waste Definitions

  1. Production waste - "trim waste" that goes into the waste bins during production
  2. Service waste - prepared product that must be discarded.
  3. Storage waste - ingredients that are lost from storage areas due to quality, damaged or expired product, etc. Known instances of ingredient theft would also be recorded in this category.

Example: Friday’s waste information must be entered by Monday

Labor Scheduling Tool (LST) Compliance

Compliance is measured by counting the total days that have all required LST fields completed and dividing by the total days that required LST data. Compliance is calculated on a calendar month basis (not a fiscal month basis).

It looks for all open cells to have data entered starting with the Account Set Up tab that drives the Planned Section weekly followed by the Daily data.

Example: If you are open Mon thru Friday, compliance requires you to enter LST data each day of the week to be 100% compliant for that week
