Egusi Soup
1 medium size chicken
16 oz Stewing beef
Seasoning Salt
Crushed hot pepper
3 chicken bouillion cubes
16 oz chopped spinach (can use fresh or frozen)
1 pack (approx 4-6 oz) ^ground melon seed (egusi)
½ cup *Palm oil
Cut up chicken into 8-10 pieces
Place chicken and beef in a pot
Add water – enough to cover chicken and beef
Add spinach (if frozen, use ½ cup less water)
Place on heat and bring to boil
Add seasoning salt, boullion cubes and hot pepper
Add egusi
Simmer down until approximately 1 cup of water is left
Serve with rice or plantain fufu
*Plantain fufu – follow instructions on package
*Can purchase egusi, plantain fufu, plantains and palm oil from any international grocery store that sells West African foods (e.g Carolina Market off New Bern Ave)
Nigerian Soup
1 medium size chicken
16 oz Stewing beef
Seasoning Salt
Crushed hot pepper
3 chicken bouillion cubes
Turnip greens (about 8-10 leaves)
Cut up chicken into 8-10 pieces
Place chicken and beef in sauce pan
Add water – enough to cover chicken and beef
Add turnip greens
Place on heat and bring to boil
Add seasoning salt, boullion cubes and hot pepper
Simmer down for approximately 20-30 minutes
Can serve over rice or boiled potatoes.
Cook rice per package instructions. Boil Potatoes until cooked.
DoDo (Fried Plantains)
4 very ripe *plantains
½ cup cooking oil
Plantains have to be extremely ripe (soft with dark brown peel)
Cut each plantain in half
Peel the plantains
Slice each half lengthwise into four slices
Heat oil on medium high setting
Fry plantain slices until golden brown on each side
Remove from cooking oil and serve
Jollof Rice
1 lb boneless chicken
1 lb beef
½ medium peeled shrimp
1 cup cooking oil
1 lb mixed vegetable (frozen)
3 cups parboiled rice (Uncle Ben’s converted long grain rice)
½ tsp Seasoned salt
3 boullion cubes (chicken or beef flavored)
½ tsp Black pepper
1 medium onion
1 red bell pepper
2 tablespoons tomatoe paste
Cook rice per package instructions
Cut chicken and beef into small pieces and brown in the cooking oil over medium-high heat. Remove from oil and let oil cool down
Peel and cut up onion in chunks
Cut up bell pepper
Place onion, bell pepper, tomatoe paste in blender and puree
Pour puree mixture in pot with oil and add seasoned salt, bouillion cubes and black pepper
Add rice, chicken. beef and shrimp
Add 1 cup water
Cover and bring to boil.
Let simmer until water dries – stir as needed.
