Title / Demonstrate knowledge of Meat Industry Agreed Standard 2 – Design and Construction

Purpose / This unit standard is for supervisors and compliance staff who are employed in a meat processing operation and who are required to have an in-depth knowledge of the design and construction of meat industry facilities.
People credited with this unit standard are able to demonstrate knowledge of: MIS 2 and design and construction requirements for a meat processing operation, and analyse the outcomes of non-compliance with MIS 2.

MIS 2– Industry Agreed Standard 2 –Design and Construction.

Outcomes and evidence requirements

Outcome 1

Demonstrate knowledge of MIS 2 and design and construction requirements for a meat processing operation.

Evidence requirements

1.1MIS 2 is described in terms of purpose in a meat processing operation.

1.2Design and construction requirements are described in terms of components.

Rangecomponents include but are not limited to – stockyards, edible and inedible processing areas, environs.

1.3The technical reasons for MIS 2 are described in terms of construction requirements.

Rangeconstruction requirements include but are not limited to – site, sanitary design, building construction, building services, equipment, amenities, animal holding facilities, slaughter and dressing facilities, refrigeration facilities, specific processing facilities, food support facilities, stores, custom killing premises and rural slaughterhouses, game depots, by-product facilities and mobile premises.

Outcome2

Demonstrate knowledge of the outcomes of non-compliance with MIS 2.

Evidence requirements

2.1Non-compliance with MIS 2 is analysed in terms of its impact and consequences on the product.

2.2Corrective and preventative actions are formulated to meet MIS 2 requirements and in accordance with organisational requirements.
