Cajun Chicken in Pasta

Ingredients

Approximately 1 lb of chicken breast

1 bunch of green onions

Parsley

8 oz (or more) of mushrooms

Minced garlic (about 3 or 4 cloves)

1 can chicken stock (or 1 cup water)

Pasta of choice

Cajun spices

Butter

Instructions

Make sure and cut all things up first. This dish goes REAL quick when you start cooking it. Its best to have all ingredients already prepared before turning on the stove.

Cut chicken into bite size pieces. Cut green onion and parsley and set aside. You can leave them in the same container. Cut up the mushrooms into thin slices and set aside. Mince up garlic and set aside.

Melt about 1 stick of butter. I use the microwave. Add 3 tablespoons (or to taste) of Cajun spices to the melted butter. Mix in chicken and coat. Set aside for approximately 30 minutes.

Start water boiling for pasta. At the same time put a VERY sturdy pan on high heat. After a few minutes, sprinkle water in the pan and see of water beads up and bounces. If not, let the pan get hotter.

Once pan is hot enough, place chicken in pan. It will most likely get VERY smoky in the house when you do this. Be prepared for smoke alarms and lots of coughing. I suggest opening doors and windows for this part.

Add pasta to water when boiling.

Cook chicken till no longer pink. Turn every couple of minutes. There will still be butter left in the pan when chicken is cooked. At this point, add the garlic and mushrooms. Cook for about 5 minutes or until all the liquid is gone.

Add chicken stock and bring to a boil.

Add about ½ a stick of butter (cut into pats) and mix till all butter is melted.

Take chicken off burner and check pasta.

When pasta is done, drain and rinse with HOT water. Drain again and rinse with COLD water.

Mix pasta and chicken together and serve.
