· PREREQUISITES: None
· COURSE DESCRIPTION: Utilizing National Association for the Education of Young Children (NAEYC) guidelines and all applicable local and state standards, this course provides the student with comprehensive concepts and guidelines and practices needed to implement appropriate policies and procedures to insure proper nutrition and sanitary, healthy, and safe child care environments. Observation in a childcare center or preschool setting is a requirement of this course. It should be noted that CPR and First Aid training are NOT part of the course.

ASSIGNMENTS
HEALTH, NUTRITION, AND SAFETY IN CHILD CARE
RESEARCH- 15 points
-Remember-All research assignments should include the answers to, “Who, What, Where, When, Why, and How” and should be prepared to share with the rest of the class.
1. Research two toys that have been recalled within the past year and prepare a handout to share with each student. 5 points
2. Select two organizations in New Hampshire or your local community that address some aspect of health, safety, or nutrition for young children and prepare a brief presentation to share with the class. 5 points
3. Research a communicable disease common in early childhood and prepare a two to three paragraph synopsis of the illness. Be prepared to share with the class. 5 points
RELATED COURSE WORK-15 points
4. Write a minimum of a one-page reflection on a personal childhood memory related to food. 5 points
5. Prepare a week of menus for breakfast, lunch and snack for a 2 year old classroom. Provide shopping list for what needs to be purchased (with amounts of food). 10 points
FIELD WORK/OBSERVATIONS-15 points
6. Complete take home Fact Sheet on Child Care Licensing Regulations. 5 points
7. Visit a child care center and survey it for indoor safety. Use the safety check list provided in class and write a two or three paragraph summary of what you found and the overall safety of the program. 5 points
8. Find two articles related to child maltreatment in newspapers, magazines, or journals. Write a one page summary about the articles (1/2 page each) and present your findings to the class. 5 points
FINAL PROJECT – Select 1 project to complete-25 points
ü Create a scrapbook with real photos (or pictures from magazine and catalogs). Include journaling and pictures that demonstrate principals of appropriate health, nutrition and safety practices in early childhood education.
ü Develop a policy manual for an ECE programs to include such topics as (at a very minimum):
o Exclusion due to illness
o Child custody and pick up policies
o Food and nutrition
o Reporting child abuse and neglect
o Health records
o Inclusion of children with special needs
ü Create a Jeopardy style game using topics and concepts from the course. Be prepared to play the game with the class.
