Restaurant Service Contest

Purpose:

To evaluate each contestant’s preparation for employment and to recognize outstanding students for excellence and professionalism in food and beverage hospitality service. This service will range from bistro and banquet service to fine dining.

Please refer to General Regulations as there is further information on the contest.

Clothing Requirements

  1. White long-sleeved button down dress shirt
  2. Black dress slacks or skirt
  3. Plain black tie or SKILLSUSAblack tie
  4. Black work shoes- Non-Slip
  5. Black socks or hose
  6. Belt
  7. **Please no waiter’s jackets, bow ties, cummerbunds, or vests are permitted
  8. **All clothing should be free of school emblems or names
  9. Bistro Apron required

Eligibility

Open to active SKILLSUSA members enrolled in programs that include food and beverage service as a part of their instruction and occupational objective.

Equipment and Materials

1)Supplied by the technical committee

a)All equipment: all table settings, guest checks, contest materials, and menus will be provided.

2)Supplied by the contestant

a)(1) Ink pen (blue or black)

b)(2) #2 pencil for written test

c)Calculator for tax rate

d)Table crumbers, lighters, note pads are optional

e)One-page, typewritten resume

Contest Guidelines

a)Contestants should be prepared to perform the duties of a dining room server as well as seating host/hostess.

b)Actual food from a kitchen will not be used. Mock Plates will be used Beverages will be served.

c)Contestants will be judged on personal appearance, tableside manner, professionalism, ease with guests, courtesy, general knowledge and technical and verbal skills.

d)Tax rate will be 8.25%

Competition Schedule

8:00-8:30 amContestant Check-in/Resume Submission – Competitors will be checked

in and assigned a competitor number and group number.

8:45amOrientation in Auditorium with Open Q&A with Technical Chair – ALL questions will be answered – everyone will be able to hear the questions and the answers. If a contestant is late and misses this session, the questions will not be repeated or re-answered. Advisers are welcome to attend.SkillsUSA Knowledge Test will be given at this time.

9:30amAll contestants will be called to the Restaurant Services contest area. There will be a brief orientation of the room and equipment provided.

9:45amAll contestants will perform 8 napkin folds simultaneously in the space provided for each contestant, each fold must be labeled. After the contest completes their folds, they will return to the holding area.

10:15am First group, consisting of 2 contestants will compete. Contests are called at random order to perform.

Please review the time allotments to ensure that the contest moves in a smooth and timely fashion throughout the day.

Table Set Up: Set up table for fine dining, (2) guests. *Use formal service setting in SkillsUSA Handbook

Time approx: 10 minutes per contestant.

Host & Guest Relations: Greeting & Seating for (2) guests.

Time approx:5 minutes per contestant.

Guest Services: For 2 “Guests”. Following set menu

Time approx: 20 minutes per contestant

Break Down: Resetting competition area for next contestant

Time approx: max 5 minutes per contestant

***There will not be a table side service at the District Level

Description of all specials

GRILLED MEDALLION OF TUNA SERVED WITH

A LEMON LIME BUERRE BLANC

A 6oz, fresh medallion of fresh gulf coast Tuna grilled on our oak fire. Served with a light lemon, lime, and white wine butter sauce. The Tuna is priced $15.95 and will be served with rice pilaf and the vegetable of the day, French green beans.
