Title / Apply quality assurance principles in an ovine cutting room

Purpose / This unit standard is for people in the supervisory or quality assurance role whose job is to ensure that beef meat products comply with the written specification for AUS-MEAT National Accreditation Standards.
People credited with this unit standard are able to describe the quality assurance process for checking ovine product compliance, and assess ovine product compliance against specifications.

3 Definitions

Industry requirements include but are not limited to – site specific requirements, company quality management requirements, hygiene, health and safety, regulatory and legislative requirements.

Written specifications – product specifications set by the customer and customer country requirements and AUS-MEAT National Accreditation Standards relating to cuts, weights, presentation, and packaging.

Industry specifications – product specifications and AUS-MEAT National Accreditation Standards relating to cuts, tolerances, product names, and yield determination.

Organisational requirements – instructions to staff on policies and procedures which are documented in memo, electronic or manual format and are available in the workplace.

Outcome 1

Describe the quality assurance process for checking ovine product compliance.

Evidence requirements

1.1 The quality assurance role is described in terms of implementation in an ovine cutting room.

1.2 The key parts of a quality assurance system are described in terms of their effectiveness.

Range key parts may include but are not limited to – customer requirements, specifications, measuring and checking, recording, corrective action, training of employees, external audit.

1.3 The sections of a quality assurance system are described in terms of their relationship to ensuring ovine product compliance.

1.4 Key quality assurance terms are defined in terms of their application in an ovine cutting room.

Range terms include but are not limited to – specification, product compliance.

1.5 Processes for identifying and managing non-conforming product in an ovine cutting room are described in accordance with organisational requirements.

1.6 Processes for monitoring critical control points at work stations are described in accordance with organisational requirements.

Outcome 2

Assess ovine product compliance against specifications.

Evidence requirements

2.1 The written specifications are described in terms of terminology for ovine products.

2.2 The ovine products are confirmed as matching the written specifications.

2.3 Ovine products are assessed in accordance with the written and industry specifications.

2.4 Non-conforming product is identified and corrective action taken in accordance with organisational requirements.

2.5 Product compliance is documented in accordance with industry and organisational requirements.
