We’ve got a New Year’s resolution-friendly recipe that is just what the doctor ordered.

Alright, the holidays are over, and it’s time to get back to some sort of routine. So if you’re one of the many folks that made the resolution to lose weight and to eat healthier, then I’ve got an easy recipe you’ll love. We start by taking a few salmon fillets and placing each one on a piece of aluminum foil. We sprinkle them with a little salt and pepper and top them off with a slice of lemon. Now, we could stop there, but to take this to another level, how about if we add a splash of white wine and a sprig of fresh dill? Let me introduce you to a new trend that’s spreading like wild fire. It’s … salads made in a jar. The idea behind them is we can make them ahead of time, this way, they’re always ready to grab ‘n’ go. So let me show how easy it is to throw together this “Cheeseburger Salad in a Jar”. The first thing we do is pour our dressing in a wide mouth quart-sized canning jar. And remember, always put the dressing on the bottom so the veggies don’t get soggy. All this week we’ve been looking at ways to eat better. One of the biggest challenges that many of us face is how to satisfy our sweet tooth while staying on track. If you’re like me and try to totally cut sweets out of your diet, you’ll probably end up cheating after a short while. A better option, use moderation and cut back on sugar and fat as much as possible. Let me show you a to-die-for version of Tiramisu that does just that. We start by lining the bottom of an 8” square baking dish with lady fingers and drizzling them with some strong black coffee. If you’re tired of serving the same few things for dinner week after week, you’re going to love what we’re making today in less than 30 minutes ... yeah less than 30 minutes.

If you’re tired of serving the same few things for dinner week after week, then you’re going to love what we’re cooking up today. Plus, it’s done in less than 30 minutes. Sounds too good to be true…well, it’s not. We start by sautéing a few boneless-skinless chicken breasts that we’ve seasoned with salt and pepper in a heavy skillet. The reason I like a heavier skillet, like a cast iron one, is that it holds the heat and browns better. While that does its thing, in another skillet, we sauté some chopped onion in a bit of olive oil. Once it’s tender, we toss in some cherry tomatoes that we’ve cut up, a few Greek olives, lots of fresh garlic and a touch of oregano. After this simmers for a bit, we add in some fresh lemon juice and we are good to go. Check out how amazing this looks when we spoon the flavor packed sauce over the chicken and top it with chunks of feta. Now this is my idea of fast food. Today we’re turning this … into this. And we’ll show you how. It’s like magic.

When it comes to eating our veggies, we probably fall into one of two categories: The … “I love all veggies no matter how they’re prepared” or the … “I’m not a huge veggie lover, but I’ll eat them if they’re disguised.” Well, today we’re focusing on cauliflower and you’ll love it no matter what category you fall into. You’ve probably had cauliflower either steamed or smothered in cheese sauce. However, recently the big trend has been to roast it or mash it -- sort of like mashed potatoes. Now, let me show you a whole new way to make it. After boiling some cauliflower and an onion until they’re tender and draining them really well, we beat them until they’re smooth. Now to that we add some low-fat cheddar cheese, panko bread crumbs, a couple of beaten eggs, a little salt and a bit of cayenne pepper for a kick (but that’s optional). Once that’s mixed, we form it into patties and cook them for a few minutes on each side just ‘til they’re golden. That’s it. And by looking at these, no one would ever know that they started with plain old cauliflower. And they make the perfect go-along to almost any dish – even for those who don’t like veggies. It’s orange season and that means there’s lots of juicy goodness waiting for us. So grab a napkin, because you’re going to need it. I promise.

Right now, Florida is in the height of orange season, and the groves are full of juicy-as-can-be fruit ready to be shipped to our markets. And since I am a big orange lover, no matter where they come from, I thought it would be the perfect time to make a light-as-can-be dessert that will help us out of the winter blues. We begin by beating together cream cheese and Greek yogurt until creamy. To that we add in some heavy cream and powdered sugar and whip it up until it’s fluffy. We beat in some orange juice along with fresh orange zest and a bit of unflavored gelatin that we dissolved in water.

After this comes together, we pour it into an 8” square pan lined with a homemade graham cracker crust, and pop it in the fridge. While it’s chilling, we dip orange segments, that we patted dry with a paper towel, in some melted chocolate. Today we’re out of the Test Kitchen visiting Fargo, North Dakota. If you’re thinking, it looks freezing – well you’re right. Although it may be cold here, let me assure you that everyone I’ve met so far has been so warm and inviting. And like I expected, the food is just as comforting. So let me share with you a fill-you-up soup that is a must-have this time of year. It’s simply some potatoes that we sautéed in butter along with a chopped onion before adding some milk. While that warms up, we make some easy homemade dumplings and once they’re tender, we add the potato mixture along with some carrots and chopped parsley. And after it simmers for a bit it’s ready to serve. And talk about satisfying. This is the kind of dish that we need on a day like today. It’s day two of our travels in Fargo. Yesterday after touring the town, we cooked up a dish that’s quite popular around here. It was potato dumpling soup. Let me tell you, since it was so cold, we needed something to warm us up. And I can assure you this time of year isn’t exactly Chamber of Commerce weather, but overall, I love this place. Everything from the Fargo Dome and the University, with its well-renowned basketball team, to all the trendy shops and restaurants. Wherever we went, one food that everyone kept talking about is called a Hot Dish. And although there are many variations, the basic premise is that it’s a warm and comforting casserole that is bursting with goodness. And when you serve this up, you can count on lots of warm smiles around the table. Ours is layer upon layer of egg noodles, ground beef tossed with tomato sauce and a savory cheese filling piled high and smothered with cheddar.
