Mexican Style Chicken Stir Fry

Ingredients

2 Chicken Breast Halves - cut into Strips, Cooking Spray, 1 cap Full Mrs. Dash Extra Spicy, Dash of Salt, Red Pepper, Yellow Pepper, Orange Pepper, Yellow Onion, 1/4 C chopped Cilantro, 1 Jalepeno Pepper (finely chopped)

Instructions

1. Cut Chicken into Strips.
2. Brown Chicken, Salt, Mrs. Dash in pan over Medium High Heat, until Chicken is cooked through. About 5 Minutes.
3. Add Remaining ingredients, cook until vegtables are tender crisp. About 2-3 Minutes
Top with Salsa and Fat Free Sour Cream, but don't forget to add in extra points

Ingredients

-Package of apples ( any kind you want) at Walmart that are already sliced up.
-Cinnamon
-Brown sugar
-Splenda
-Chopped Pecans

Instructions

Stir together about 1/4 cup of splenda, 1- 2 tbsp brown sugar, and 1 - 2 tsp cinnamon.
Put apples in a metal baking pan sprayed with cooking spray so they won't stick. Sprinkle apples with splenda mixture and stir apples in the pan to get them good and coated. Bake at 350 degrees to your liking. I cook mine about 15 minutes then take them out and stir them and add the chopped pecans. Put them back in the oven for an additional 10 minutes. They come out absolutely DELICIOUS and can be used as a side dish or desert. Enjoy!

Mexican Steak Stir-Fry

Ingredients

3/4-pound beef boneless sirloin
1 medium onion, chopped (1/2 cup)
1 small green bell pepper, chopped (1/2 cup)
1 colve garlic, finely chopped
1 cup frozen whole kernel corn
1 cup salsa
1 medium zucchini, sliced (2 cups)
1 can (15-16 oz)pinto beans, rinsed and drained
1 can(14 1/2 oz) whole tomatoes, undrained

Instructions

Remove fat from beef. Cut into 1/4x1/2-inch strips. (Beef is easier to cut if partially frozen about 1 1/2 hours.)
Spray 12 inch nonstick skillet with cooking spray; heat over mediun-high heat. Add beef, onion, bell pepper and garlic; stir-fry 4-5 minutes or until beef is brown. Stir in remaining ingredients, breaking up tomatoes. Cook about 5 minutes, stirring occasionally, until zucchini is tender and mixture is hot

1/2c margarine 2 cloves crushed garlic 1/2c allpurpose flour 1tsp salt 2c of skin milk 2c of chicken broth 2c shredded fat free mozzarella chesse 1/2 grated parmesan cheese 1 medium onion chopped 1tsp dried basil 1/2 tsp dried oregano leaves 1/4tsp black pepper 8ounces of uncooked lasagne noodles (9 noodles) 2cups cottage cheese 2 cups cooked chicken 2 packages frozen chopped spinach,thawed 1/2 cup of grated parmesan cheese

Heat margarine in 2-quart saucepan over low heat until melted:add garlic ,Stir in flour and salt Cook stirring constantly, until bubbly.Remove from heat:stirin milkand broth. Heat to boiling,stirring constantly. Boiland stir1minutes,Stirin mozzarella cheese,1/2 cup parmesan cheese,theonions.basil.oregano and pepper. Cook over low heat stirring constantly until mozzarella cheese is melted. Spread 1/4 of the cheese sauce(about 1 1/2 cups) in ungreased rectangular baking dish 13x9x2 inches; top with 3 uncooked noodles overlappingif necessary. I mixed the thawed spinach cottege cheese and chicken together and spread them over each layer of the noodles and sauce. ounce you finish layering the lasagne top with the remaining parmesan cheese. Cook uncovered in 350 degree oven until noodles are done 35 to 40 minutes. Let stand 15 minutes before cutting. Enjoy! I used the no-boil lasagne noodles. I thawed the spanich and squeezed it dry.before putting it into the cheese. I also whipped the cottage cheese.the cottage cheese was 16oz also spanich was 2-10oz packages

Homemade Harmburger Helper

1 lb Ground Beef
4 cups Low-Fat Mexican Shredded Cheese
1 cup Corn
1 Can Reduced Fat Beef Broth
2 Packages Elbow Macaroni
1 packet Stew Seasoning

Instructions

Brown Ground Beef with stew seasoning. Drain. Put this into crock pot with 3 cups cheese, corn, and beef broth. Cook for 10 hours. Cook Elbow macaroni and add to mixture and sprinkle one cup of cheese on top and melt for 20 minutes. Enjoy! This is a lot like Hamburger Helper and has been mistaken for Hungarian Goulash. It's very tasty, and I found it in a crock pot cook book. A serving is a cup, but well worth it!

Pumpkin Whip Dessert

16 oz. Cool Whip Free Whipped Topping, thawed...
1 oz. fat free sugar free Vanilla pudding mix...
15 oz. canned pumpkin...
1 1/2 T. pumpkin pie spice...
4 oz. mini marshmallows...

Instructions

Fold dry pudding mix into coolwhip. Stir in pumpkin, spice and marshmallows. Refrigerate and enjoy..... I used the recipe builder to get the points. 1 cup is 1 point and it is really good. No pie for me. I have also made it with sugar free fat free butterscotch pudding mix. :)

Praline Pumpkin Dessert

15 oz pumpkin, not pie filling
12 oz fat-free evaporated milk
3 eggs
3/4 cup Splenda
4 teaspoons pumpkin pie spice
1 box yellow cake mix, unprepared
3/4 cup chopped pecans
3/4 cup light butter, melted

Instructions

Heat oven to 350. Spray 13x9x2 cake pan with nonstick spray. In medium bowl, beat pumpkin, milk, eggs, Splenda, andpumpkin pie spice with wire whisk until smooth. Pour into pan. Sprinkle dry cake mix over pumpkin mixture. DO NOT STIR. Sprinkle with pecans. Pour melted butter evenly over top. Bake 50-60 minutes or until knife inserted in center comes out clean. Cool 30 minutes. May serve with whipped cream or whipped topping of choice, adding any additional points for topping. If larger portions are desired: 20 servings=5 points, 18 servings=6 points.

*1 cup sugar free vanilla ice cream (Breyers brand 1 point per 1/2 cup)
*Sprinkle of cinnamon
*Sprinkle of splenda
*1 small apple

Instructions

slice apple and sprinkle with splenda and cinnamon. Bake until warm or tender (depends on preference)
Put apples over 1 cup ice cream ...So Simple and very yummy. You can add granola or a gram cracker and it tastes more like an apple crisp!

Chocolate Banana Snack Cake

2 very ripe bananas
1 1/4 cups flour
3/4 cup sugar
1/4 cup unsweetened baking cocoa
1/3 cup unsweetened applesauce
1/3 cup water
1 tsp baking soda
1 tsp white vinegar
1/4 tsp salt
1/4 cup mini chocolate chips

Instructions

Heat oven to 350 degrees. Place bananas in an ungreased 8-inch square pan; mash with fork. Stir in remaining ingredients except chocolate chips. Sprinkle chocolate chips over batter. Bake 35-37 minutes or until toothpick inserted in the center comes out clean. Cool and enjoy!
