Spinach and Strawberry Salad

"This salad has lots of spinach, lots of fresh, sliced strawberries, and a delicious, sweetened oil and vinegar dressing spiked with poppy seeds."

Ingredients:

1 bunch spinach, rinsed and torn into bite
-size pieces
2 cups sliced strawberries
1/4 cup vegetable oil
2 tablespoons white wine vinegar / 1/4 cup white sugar
1/8 teaspoon paprika
1-1/2 teaspoons poppy seeds

Directions:

1. / Rinse spinach and pat try with towel. Rinse strawberries, slice thinly with paring knife. In a large bowl, gently toss together the spinach and strawberries.
2. / In a medium bowl, whisk together the oil, vinegar, sugar, paprika, and poppy seeds. Pour over the spinach and strawberries, and lightly toss to coat.

Grandma Honey’s Coleslaw

Dressing: Shake together in jar:

1/3 c. white vinegar

1/3 c. vegetable oil

1/3 c. granulated sugar

Salt and pepper

Rinse and Finely chop or grate with chefs knife and cutting board:

Cabbage

carrots

Onion, to taste

Toss together in bowl- chill until serving time.

Strawberry and Mandarin Salad

"This is a fresh summer-time salad that is inexpensive and easy to make. This salad can be made up the day before and is always a crowd pleaser."

Ingredients:

1/2 cup sliced almonds
3 tablespoons white sugar
1/3 cup vegetable oil
3 tablespoons apple cider vinegar
hot sauce
2 1/2 tablespoons white sugar
1 teaspoon salt / 1 dash ground black pepper
12 oz. salad greens
1 (11 ounce) can mandarin oranges,
drained
1 cup sliced fresh strawberries
1 cup chopped celery
1/2 cup chopped red onion

Directions:

1. / Stir the almonds and 3 tablespoons sugar together in the skillet over medium heat; cook until the sugar has melted and coats the almonds; 15 to 20 minutes. Set aside.
2. / Rinse strawberries and slice thinly with paring knife. Clean celery and slice with chefs knife and cutting board. Finely chop red onion.
Whisk the vegetable oil, vinegar, hot sauce, 2 1/2 tablespoons sugar, salt, and pepper together in a bowl. Toss the spring mix, oranges, strawberries, celery, and onion, together in a large mixing bowl; drizzle the vegetable oil mixture over the lettuce mixture and stir gently to coat. Sprinkle the toasted almonds over the salad to serve.

Ambrosia Fruit Salad

Ingredients:
2 (20 ounce) cans pineapple tidbits,
drained
2 (15 ounce) cans mandarin oranges,
drained / 1 (8 ounce) container sour cream or yogurt
1 ½ c miniature marshmallows
1/3 cup shredded coconut, or to taste
Directions:
1. / Mix pineapple, oranges, sour cream, marshmallows, and coconut together in a bowl. Cover bowl with plastic wrap and refrigerate until flavors blend, 2 hours to overnight.

Wilted Spinach Salad

"This rich and flavorful salad features fresh spinach and green onions drizzled with a warm, sweet, vinegary dressing, and sprinkled with crunchy bacon and tender bits of hard boiled egg."
Ingredients:
6 hard cooked eggs
1 pound bacon
2 bunches fresh spinach
4 green onions, thinly sliced / 2 eggs
1/4 cup white sugar
1/4 cup white vinegar
1/4 cup red wine vinegar
Directions:
1. / Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside, reserving approximately 1/2 cup of drippings in the skillet.
1. / Rinse & dry spinach greens. Rinse green onions, pull off any old layers, trim off roots and slice thinly using chefs knife and cutting board.
3. / In a large bowl, toss together the spinach and green onions.
4. / Heat the reserved drippings over low heat. In a small bowl, whisk together the 2 raw eggs, sugar, white vinegar, and red wine vinegar. Add to warm grease, and whisk for about a minute, until thickened. Pour at once over spinach, add crumbled bacon, and toss to coat. Garnish with chopped egg.

Easy Guacamole

"Avocados, onion, chopped tomato, garlic and a splash of lovely lime juice. That's all. Well, maybe a dash of salt and pepper and an hour or so in the refrigerator. Fabulously easy."

Ingredients:

2 avocados
1 small onion, finely chopped
1 small bunch cilantro, minced
1 clove garlic, minced / 1 ripe tomato, chopped
1 lime, juiced
salt and pepper to taste

Directions:

1. / Slice avocado in half and twist top off. Wedge chef’s knife in pit and twist out. Use a spoon to scoop out avocado from skin. Mash avocados in a medium serving bowl. Stir in onion, garlic, tomato, lime juice, salt and pepper. Season with remaining lime juice and salt and pepper to taste. Chill for half an hour to blend flavors.
Baked Tortilla Chips

"Cumin and lime juice add a real zing to these chips, and they're best when served warm."

Ingredients:

1 (12 ounce) package corn tortillas
1 tablespoon vegetable oil
3 tablespoons lime juice / 1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon salt

Directions:

1. / Preheat oven to 350 degrees F.
2. / Cut each tortilla into 8 chip sized wedges with a pizza cutter and arrange the wedges in a single layer on a cookie sheet.
3. / In a mister, combine the oil and lime juice. Mix well and spray each tortilla wedge until slightly moist.
4. / Combine the cumin, chili powder and salt in a small bowl and sprinkle on the chips.
5. / Bake for about 7 minutes. Rotate the pan and bake for another 8 minutes or until the chips are crisp, but not too brown. Serve with salsas, garnishes or guacamole.
