How to cook bacon for 100

For 100 people purchase 9 pounds of bacon

There are several options:

1)Bacon done night before:

Fry bacon on the grill and drain on paper towels.

When drained, layer in a deep pan in layers of foil; refrigerate.

Reheat in morning @ 250 for about 45 minutes, watching so it does not dry out.

2)Bacon done in the morning/in oven

Bake the bacon in the oven in single layers on rimmed sheet pans

(to catch the rendered bacon fat).

Bake @ 400 degrees. If doing multiple trays in same oven, be sure to switch trays for even cooking. Should take about 12-15 minutes total. Be careful to watch during baking to check for doneness.

Transfer cooked bacon to paper towel-lined trays and drain fat.

Keep warm in low ovens until serving. Do not let dry out.

3)Use new pre-cooked bacon and just heat in the morning. Available at Costco and turns out well. (the men do not like is as much as the women)

4)Bacon done the old-fashioned way - just fry it in the morning and drain on paper towels.

No-Crust Zucchini Quiche

4 #400 pans - serves 96

54 cups (48 small) shredded zucchini

18 cups (32 medium) chopped tomatoes - drained

72 eggs, lightly beaten

4 1/2 cups salad oil

4 1/2 T salt

1 1/2 T. pepper

18 cups Bisquick Mix

13 1/2 pounds grated Monterey Jack cheese

Coat with Pam Spray 4 #400 pans. Preheat oven to 400 degrees. In a large bowl stir together with a fork the zucchini, tomatoes, eggs, oil, salt & pepper. Stir in the Bisquick Mix and cheese. Pour into a prepared dish, cover and refrigerate over night until morning. Bake at 400 degrees for 40-50 minutes or until puffed and golden brown. Keep your eye on it.

Single recipe

3 cups shredded zucchini

1 cup chopped tomatoes - drained

4 eggs, lightly beaten

1/4 cup salad oil

3/4 tsp salt

1/4 tsp pepper

1 cup Bisquick

2 cups (3/4 pound) grated Monterey Jack cheese

THIS RECIPE WILL BE EASIER TO MAKE IN 4 BATCHES AFTER ALL INGREDIENTS HAVE BEEN PREPARED.

Baked French Toast

Serves 100

100 slices 1 ½ inch thick Italian bread (1 slice per serving this is very rich)

6 dozen eggs

3 gallons milk

4 T salt

½ cup vanilla

2 T nutmeg

4 T cinnamon

1 gallon Maple syrup

1 bag powdered sugar

Individual butter pats

Pam spray

Night before:

Lay bread in single layer in parchment lined #400 pans,

Mix eggs, milk, salt, vanilla and spices. Pour mixture over bread. Cover and refrigerate overnight.

Morning:

Heat up the oven to 375. Bake for approximately 45 min to an hour.

Serves 1 per person. Takes about 1 hour to complete.
