Apple Pie Bits CORE

Ingredients

1-1/2 cups uncooked oatmeal (6) 1 tbsp ground cinnamon (0) 1/2 tbsp ground nutmeg (0) 1/3 cup Splenda (0) 1 peeled, and grated apple (1) 1/2 cup unsweetened apple sauce (0) 1/4 cup egg subs (0) 1 tsp vanilla (0) 1/4 cup water to moisten the batter (0)

Instructions

Preheat oven to 325. Mix all the ingredients in a mixing bowl. Spray the bottoms of 18 cupcake wells with PAM. Place about 1 heaping tsp of batter into the bottom of each prepared cupcake well. Using the tip of the spoon, press the batter into shape and and level each cookie. Place each pan into the oven. And bake for 15-20 min until they are crisp, and easily fall out of the pans, cool on a cooling rack. Store any extras in an airtight pan in the refrigerator.

Special notes These cookies are CORE, 0.3 POINTS each. I like to place about 1 tsp of sugar free cool whip on a warm cookies before eating them. To me the sugar free frozen cool whip taste a lot like ice cream. This recipe. Is good with a banana (2) an tsp pure unsweetened coco (0).

Chocolate covered apples

Muy Bien Taco Dip

16 oz chunky salsa
16 oz ff sour cream
16 oz ff cream cheese
1 medium tomato diced
1 cup shredded lettuce
1 medium onion diced
1 green pepper diced
2 cups shredded ff cheddar cheese

Instructions

Blend salsa, ff cream cheese and ff sour cream together with mixer and spread in 9x13 pan. Top with shredded lettuce, tomato, green pepper, onion and ff cheddar cheese. I serve with baked Tostitos Scoops which are 2 points for 15 chips. Can easily halve this recipe, just use a smaller pan for 6 servings.

Bruschetta Chicken Bake

Ingredients

1-1/2 lbs. boneless, skinless chicken breasts, cut into bite sized pieces
1-14-1/2 oz. can diced tomatoes, undrained
1 pkg. (6 oz) Stove Top stuffing mix-chicken flavor
2 cloves garlic, minced
1 tsp. dried basil leaves
1 cup WW shredded mozzarella cheese
1/2 Cup hot water

Instructions

Preheat oven to 400 degrees. Place tomatoes with their liquid in medium bowl. Add stuffing mix, 1/2 cup hot water, and the garlic; stir till stuffing mix is moistened. Set aside.
Place chicken in 13x9 baking dish; sprinkle with the basil and cheese. Top with the stuffing mixture.
Bake 30 minutes or until chicken is cooked through. This is delicious!! I ran it through the recipe builder and it came out to 6 pts. per serving. One cup equals a serving. One cup is a lot. Serve with a salad and it's a very good meal.

Easy Tortilla Soup

Ingredients

5 chicken breasts
2 quarts chicken broth
1 can black beans,rinsed
1 jar picante sauce
1-1/2 C sour cream
1 C frozen corn
1 C Mexican shredded cheese
5 small corn tortillas
salt, to taste

Instructions

Boil chicken broth
Add chicken breast (cooked or not)
Boil chicken 15 mins (if not cooked)
Add salsa, sour cream, black beans, corn
Simmer for a short time. Add water and salt, if need more liquid.
Cut tortillas into strips, spray lightly with olive oil, and bake.
To each bowl, add sprinkle of cheese,1/2 of a tortilla (strips), and dollop of sour cream on top.

Chicken Fajita Pasta

Ingredients

4 oz. Whole Wheat Pasta
1 medium onion, diced
1 medium sweet red pepper, diced
4 large mushroom, sliced
2 t Taco Seasoning (more if you like)
8 oz chicken breast, cooked, skinless, diced
1 medium tomato, diced

Instructions

Saute onion, mushrooms and peppers in a touch of chicken broth until soft. Add the taco seasoning, tomatoes and chicken and cook until hot.
While veggies are cooking, cook pasta according to directions.
Combine all ingredients, top each serving with your favorite Fajita toppings (don't forget to add the extra points)! (ie, avocado, Fat free sour cream, shredded reduced fat mexican cheese, salsa etc. Enjoy. This recipe makes 2 LARGE serving or 4 smaller servings for lunches.

Creamy Pumpkin Mousse

1 can (6 oz) solid pack pure pumpkin
1 pkg (6 serv size) instant sugar free vanilla pudding mix
1/4 cup low fat (1%) milk
1 tsp ground cinnamon
2 cups frozen light whipped topping, thawed

Instructions

In a medium bowl, with an electric beater on medium speed, beat the pumpkin, pudding mix, milk and cinnamon until well blended.
Fold in the whipped topping until thoroughly blended, then spoon into a serving bowl.
Cover loosely and chill until ready to serve. 1/2 cup = 1 serving Per Serving: Calories 65 / Fat 2 gm / Fiber 1 gram

Cinnamon Apple Muffins

Instructions

Mix flour, baking powder, cinnamon, Spelnda, & apples in a bowl. Blend milk, egg, applesauce, & margarine together. Combine mixtures and pour into greased muffin tins. Bake at 400 degrees for 25 to 30 mins or until inserted toothpick comes out clean.

1 pkg Uncle Bens Wild rice(if in a hurry use two pkgs of the 90 second rice)
1 Can 98%fat free cream of celery soup
1 med. jar pimentos
2 c. french green beans, drained

1 cup hellman's light mayonaise
1 can water chestnuts, drained and sliced
salt and pepper to taste.

Instructions

Pre-heat oven to 350. Mix all ingredients, and put into a large baking dish. Bake for 25 -30 minutes.

Gramma's Old Fashioned Chili Mac

1 c. whole wheat macaroni
1 lb. 7% fat ground beef or turkey
1 small onion
1 c. chopped celery
1/2 lg. green bell pepper, chopped
1 (15 oz) can kidney beans
2 (10.75 oz) cans condensed tomato soup
2 (14.5 oz) cans diced tomatoes
1/8 c. brown sugar
salt and pepper to taste

Instructions

Bring a pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
In a small saucepan, simmer celery and green pepper with water to cover until tender; drain.
Place ground beef in a large heavy skillet over medium heat. Cook until evenly brown. Add onion, and cook until tender and translucent. Drain excess fat. Add celery and green pepper. Stir in kidney beans, condensed tomato soup, diced tomatoes and brown sugar. Season with salt and pepper, and stir in macaroni. Yum!

Instructions

press hash browns into bottom of 13x9 pan. Bake at 350 for 5-10 min. Meanwhile cook sausage and drain. take out potatoes sprinkle with sausage & bacon peices. Mix eggs and eggbeaters together and pour over other ingrediants. sprinkle with cheese. bake for 40 min @ 350. I like to cover my casserole with tin foil to prevent the eggs getting overcooked. Can be cut into 12 servings @ 4 pts but I like bigger peices. Also if you used all eggbeaters it would reduce the point value to 5 pts per serving

Creamy Caramel Fruit Dip

3/4 cup Brown Sugar Twin
1 cup fat free sour cream
1 cup 1% milk
1 (4 ounce) package fat free, sugar free, vanilla instant pudding mix

Instructions

Combine the cream cheese and brown sugar twin in a medium bowl. Beat at medium speed until creamy. Add the sour cream, milk, pudding mix, vanilla and lemon juice, beating well after each addition. Chill, covered until serving time. Serve with assorted fresh fruit. (Remember to add points for fruit!)

White Bean Chili

1 lb ground turkey
1 tblsp. olive oil
1 tblsp. cumin
1 tblsp. paprika
3 tblsp. garlic
1 lg onion
1 lg green pepper
2 cans white beans
1 can hominey
1 16 oz box of chicken stock - low sodium
1 can 98% ff cream of chicken soup

Instructions

Brown 1 lb. ground turkey in 1 tblsp olive oil. Add large chopped onion, 1 chopped green pepper, 1 tblsp. cumin, 1 tblsp. paprika, 3 tblsp. garlic. Cook until vegetables are tender. Drain and rinse 2 cans of white beans and 1 can of hominey. Add 16 oz. chicken broth. Add white beans and hominey. Simmer for 5 minutes. Add cream of chicken soup (98% fat free) and simmer for another 5 minutes until thickenend. Makes 12 one cup servings.
