STATE PARK SERVICE (SPS) – PROVIDED CONCESSION EQUIPMENT

Concessionaire shall be responsible for the regular, daily and long-term maintenance of ALL concession equipment during the entire term of their concession agreement. SPS will meet with concessionaire prior to the beginning of each concession season and at the end of each concession season to review the status of the State-owned concession equipment. If State-owned concession equipment malfunctions, the SPS will troubleshoot and repair. SPS will replace State-owned concession equipment as determined necessary. The Concessionaire shall be responsible for replacement of any equipment damaged as a direct result of the Concessionaire’s failure to perform required maintenance, abuse or misuse. The State-owned, provided concession equipment is listed below, along with the Concessionaire’s and SPS’s maintenance/repair/replacement responsibilities in accordance with the Concession Agreement paragraph entitled “REPAIR”. Items may be added or replaced on this list dependent upon concession location and need, at the discretion of the SPS.

Griddle/Grill with exhaust hood

Concessionaire:

- Daily cleaning and sanitizing

- Daily grease / waste removal from collection trays

- If the chute/chimney extending from the hood through the structure to the exterior of the building is determined to need cleaning by a fire inspector the concessionaire will be solely responsible for obtaining the services of a recognized, professional exhaust hood-cleaning service to clean the hood and obtain fire inspector’s approval.

- Winterize grill – including final cleaning and oil coat to prevent rust

SPS:

- Shall repair or replace as determined necessary.

Double-fryer with warmer & tray

Concessionaire:

- Daily cleaning and sanitizing

- Replacement of oil, as needed, to ensure healthy standard

- Proper recycle/disposal of used oil

- Winterize fryers – including emptying all oil, final cleaning and oil coat to prevent rust

SPS:

- Shall repair or replace as determined necessary.

Ice maker with bin

Concessionaire:

- Initial cleaning and sanitizing at start of season

- Daily cleaning sanitizing as needed

- Final cleaning and sanitizing at end of season

- Clean and/or replace air-filter monthly

SPS:

- Shall replace water filters at the prior to the start of the season. Locations with high iron content water may require monthly replacement to protect the equipment.

- Regular replacement of interior filters, if applicable, according to machine’s maintenance schedule

- Winterize

- Shall repair or replace as determined necessary.

Refrigeration (size dependent upon location) one large for storage (reach-in or existing walk-in) & one (1) small unit near grill/food preparation area for safe food handling/preparation)

Concessionaire:

- Daily cleaning interior, exterior and door seals

- Monthly cleaning of coils and/or filters

SPS:

- Shall repair or replace as determined necessary.

- Winterize

- Shall repair or replace as determined necessary.

Freezer (size dependent upon location) one large (reach-in or existing walk-in)

Concessionaire:

- Daily cleaning interior, exterior and door seals

- Monthly cleaning of coils and/or filters

SPS:

- Shall repair or replace as determined necessary

- Winterize

Stainless-steel preparation table/s (size and # of units dependent upon location)

Concessionaire:

- Daily cleaning and sanitizing

SPS:

- N/A

Three-compartment sink

Concessionaire:

- Daily cleaning & sanitizing

- Report damaged or broken faucets or drains

SPS:

- Shall repair or replace as determined necessary

- Winterize

NOTE: Coffee Maker

The Concessionaire shall be responsible for providing this equipment. Any equipment on site may be used by the Concessionaire, however the SPS is not obligated to repair or replace this equipment if damaged or broken.
