Course Description:
Culinary Arts begins with the fundamentals and principles of the art of cooking and the science of baking. Course includes management and production skills, cooking techniques, and safety and sanitation skills. Culinary 2 students will also work an internship working in the MHS Kitchens.
Key Skills
A student enrolled in Culinary Arts should possess the following abilities when entering the class:
- Learn and safely use knife skills independently
- Work safely as part of a team
- Work safely independently while performing kitchen skills using various pieces of equipment
- Read, comprehend, and execute recipes
- Listen and follow directives
- Use math skills independently
- Comprehend and execute safety and sanitation skills
- Comprehend and use serving skills as an employee of a dining establishment
- Plan, prepare, and serve food to a large number of people
- Comprehend the licensing regulations of Travis County Health Department
- Be present in class on a daily basis
- Be responsible and respectful
- Be the “lead” person for all events (Bistro, catering)
ALL STUDENTS ENROLLED IN A CULINARY ARTS CLASS MUST COMPLETE A POLICY PACKET BEFORE BEING ALLOWED TO PARTICIPATE IN LABS OR RECEIVE THEIR UNIFORM.
GRADING
A= 90-100
B = 80-89
C = 70-79
F = Below 70
Safety and Sanitation
Due to safety and sanitation guidelines the following procedures will be followed by all students.
- No jewelry may be worn during labs
- No baggy hoodie, sweater, or jacket may be worn during labs
- Hair must be covered by a hairnet or cap during all labs
- No horseplay
- No chewing gum, eating, or drinking during labs
- No tasting what you are cooking with your finger, use a plastic spoon
- Everyone must participate in labs
- Students will follow rotation schedule for duties and complete those duties as warranted
- Students should not comb, brush, or braid hair in the kitchens or classroom
- No open toed shoes during labs and shoes should have rubber soles
Class Requirements
- Attendance is very important in meeting the objectives of the class. Students should make every effort to attend class everyday.
- If you are in class then you must participate in labs unless you have a signed Dr’s note stating a medical reason why you cannot participate
- Class participation is part of your daily grade
- If you have a FOOD ALLERGY we need to know – be sure to tell us
- You are required to cook the food but you are not required to taste or eat it
- When there is a lecture going on or the instructor is talking to the class do not ask to leave the room for any reason. Also you should not be getting up out of your seat during this time either.
Visitors
The wonderful aromas that come out of our classroom can attract other students. At no time is anyone allowed to open the door and give out food or let other students into the room.
Travis County Health Department
Our kitchens are licensed by the Travis County Health Department. At anytime they may come in and inspect and/or visit. If they visit while you are here continue on with whatever you were doing. They will walk around and do an inspection and they may stop and ask you what you are doing.
What We Study
We go beyond the basics of cooking, safety and sanitation. We run a business – Bistro M where students actually do the cooking, act as waitstaff, clean up after the Bistro closes – in other words you run a business. Culinary 2 students are expected to act as the “lead” for all events.
Electronics
Unless we give you an assignment that requires the use of electronics we do not want to see them out and about in the classroom. Electronics are bacteria ridden instruments that are never allowed out in the labs. NEVER!
Binder
All culinary art students will keep a binder of their work, recipes, worksheets, policy packet, resources and a calendar.
