Lesson title: Wraps ‘n rolls

This lesson enables pupils to demonstrate food preparation skills when making Spring rolls, i.e. vegetable preparation, dividing, shaping finishing and baking. The pupils will also create a recipe card to promote their chosen farm assured product.

5 / Introduction
Registration.
Explain to the pupils that they will be making spring rolls. Go through the objectives for the lesson.
Starter
Gather the pupils around a demonstration area, with your tray of ingredients and equipment. Ensure that all pupils have their apron on, hair tied back and hands washed.
Briefly talk through the recipe – note your expectations, for example:
  • preparing the ingredients carefully and accurately;
  • preparing the vegetables accurately ;
  • using the spices;
  • handling the filo pastry, shaping and finishing;
  • using the hob and oven safely;
  • being hygienic and safe when preparing food.

10 / Main activity 1
Ensure that pupils all wash their hands. Allow them to start making their spring rolls.
During this time, circulate the room to ensure that pupils are preparing ingredients and using the oven safely. In this time, pupils should:
  • preheat the oven;
  • prepare the vegetables;
  • soften the onion, par-boil the carrots and potatoes;
  • complete the filling mix – adding any additional or alternative ingredients;
  • cut, fill and shape the spring rolls;
  • finish and bake the spring rolls.
During the remaining time pupils should be washing up, cleaning work surfaces and putting away equipment.
Remind pupils that all washing-up should be completed, work surfaces should be clean. Their spring rolls should be cooling ready to be stored.
Circulate the room, ensuring that sinks are clean and equipment is put away properly.

Gather the pupils together. Review the dishes that have been produced.
Look at a range of recipe card examples (or digital version). Ask the pupils to identify the main features of the cards.
Challenge them to plan a recipe card that they will develop and create to promote the farm assured product they have used. They may wish to take digital images to use. Complete for homework. / Recipe cards or digital examples
