The workshop is organized by the Department Food and Bioprocess Engineering of AgroParisTech –Centre de Massy (UMR 1145), 1 avenue des Olympliades-Massy (Fr).

Context and objectives

Thereare new and fast-emerging scientific and technological fields which focus on the manufacture, processing and applications of nano-structured matrices with unique futures in food, bio-products and medication.

The main objectives of the workshop are to point out the reactivity of matrices, micro- and nano-structured, containing lipids, proteins or other biopolymers. Their specific role will be presented through different aspects: improvement of functionality in low fat food products, protection and controlled release of active molecules such as vitamins, antioxidants, omega-3 fatty acids, minerals, other bio-actives…

I - Novelmatrix structures (emulsion, microemulsion, solid particles, spheres)

II - Advanced techniques of analysis and characterization

III - Production of micro- and nano-structured matrices

IV - Functional properties in food and bio-products

COMMUNICATIONS

The plenary and invited conferences are followed by oral communications (15-20min), selected among contributions from participants from university andindustrial research institutes, as well as PhDand master students. Submissionsfitting well with the subject matter of the workshop are schedulled in different sessions and include 5 min beak to stimulate well discussions and interactions between presenters and participants gathering academic and industrial researchers, and also Ph D and master students.

A final round table will gather actors from research and technology to discuss about the potentiality and risks of structured matrices in food and bio-products.
