“SEAGULL” WINGS COOK-OFF
Rules and Regulations- Commercial

Ingredients & Preparation

·  Please use high quality freshly thawed wings.

·  Wings must be prepared in a commercial kitchen and you must bring a copy of your Food Permit. Please provide proof of insurance (see below). Every volunteer, helper, contestant must have a food handler’s permit. They’re available online at www.kitsappublichealth.org under Information, Food Safety, and Food Worker Cards.

·  Temperature of wings will be checked and must be at 165 degrees to meet Health Dept. standards.

·  Please provide a minimum of 300 WINGS. We do anticipate large crowds, so 300 wings are appreciated.

·  One type of wings per entry. You must register and pay entry fee for each type of wings entered.

·  No water, electricity, or refrigeration will be provided.

·  Please provide your own chafing dish, tongs/serving utensils. Please provide plate or platter to present wings for judging.

·  Please arrive with your wings no later than 9:45am, Sat, May 27th. Judging starts at 11:00 am. Wing sales at noon.


Judging

·  Please provide a serving piece/platter for presentation of wings to the Judges. (it counts for 5pts.)

·  All professionals will be under one tent and you will be assigned a number and location in tent area. You will not be allowed in judging area.

·  Judging Criteria. You will be judged on the following: Taste 10 pts.; Originality 5 pts.; Plating 5pts. For a possible total of 20 pts.

·  1st, 2nd & 3rd Awards/Plaques for Best “Seagull” Wings will be given as determined by the judges.

·  Judging will start at Noon 1st, 2nd & 3rd place winners will be announced at the completion of judging.

·  A People’s Choice Award will be determined by ballots available only at the PO Chamber headquarters tent. This award will be announced at approximately 1:30pm after Seagull Calling Contest.

·  If you are unable to stay and serve your wings to the public call and we will arrange a volunteer.

Application, Fees and Registration-- Space is limited, register early.

·  Application and fee must be paid no later than May 19th.

·  You must provide a certificate of insurance naming the Port Orchard Chamber of Commerce and its employees, staff, agents, and volunteers as additional insured in the amount of not less than $1,000,000. Please send with registration form.

·  Upon arrival you must check in with Cook-off Coordinator.

Any infraction of above rules and regulations may disqualify you from the competition.
