The Aberlour 10 Year Old is a classic Speyside Single Malt. It is matured in a combination of sherry and bourbon oak casks for a minimum of 10 years. It is gold in colour with a dry fresh fruity aroma with sweet notes of mint toffee. It has an exceptionally smooth and creamy taste, with spicy-sweet nutmeg and honey combining with the dewy freshness of autumn fruits. A long, soft warming finish.

Balvenie 12 Year Old Double Wood.
Colour: Amber. Nose: The sherry comes through due to the second. Full bodied. Palate: Mellow, rich and smooth. An interesting complexity that will make you pay attention to detail as you taste this very unique malt. Finish: Warming. Long-lasting, with the complexity still getting one's attention. The sherry is evident, with a most interesting fullness.

Bunnahabhain 12 Year Old Single Malt.
Colour: Deep gold.
Nose: Full, refined and rich with oily peat hints, toffee, liquorice and flowers.
Taste: Rather intense but still sweet with some peat hints, a rather rustic but still delicate taste.
Finish: A pleasant long full finish, coming back on ripe fruit and honey.

Glenfiddich Special Reserve 12 Year Old
Nose: Fresh and fragrant, touch of pear.
Taste: Distinctive, well-balanced flavour of rich fruit, subtle pine and a hint of peatiness.
Finish: Satisfyingly long, lingering and rounded and smooth aftertaste.

The Glenlivet 12 Year Old Single Malt.
Colour: Light or pale gold.
Nose: Aromatic, with flowers. Clean and simple, with some maltiness. Sherry notes, some spice and vanilla.
Taste: Subtle peatiness. Delicate. Slightly sweet and fruity, with vanilla notes. Clean and well-balanced.
Finish: Long, but mild and warming. A trace of peat at the end.

Bowmore 12 Year Old Single Malt.
Colour: Warm Amber.
Nose: Peaty, lemon, pears and honey.
Body: Medium.
Taste: Smokiness balanced by heather honey sweetness. Chocolate, pear, citrus bouquet.
Finish: Long, complex and satisfying.

Jura 10 Year Old.
Colour: Pale Gold.
Nose: A hint of sweet honey balanced with dried fruits and sherry.
Taste: Lingering taste of sweet pear, crushed apples and maple syrup.
Finish: Dried fruits, sweet toffee and a hint of wood spice.

Glenmorangie 10 Year Old Single Malt.
Colour: Yellow gold.
Nose: A rich nose, flower and spicy hints with some vanilla wood notes.
Taste: The taste confirms the nose, delicate honey wood taste with a subtle hint of nuttiness.
Finish: Smooth and relatively long.

Highland Park 12 Year Old Single Malt
Colour: Glowing amber.
Nose: Heather-honey sweetness; peaty smokiness.
Taste: Rounded smoky sweetness; full malt delivery.
Finish: Teasing, heathery, delicious.

Chivas Regal

Colour: Radiant, warm amber.

Nose: An aromatic infusion of wild herbs, heather, honey and orchard fruits.

Taste: Rich and fruity, Chivas bursts with the smooth taste of ripe, honeyed apples, and notes of vanilla, hazelnut and butterscotch.

Finish: Enjoy the generous, lingering finish.

Dimple (1974)

Nose: Medium-body with warming notes of spice and caramel.

Palate: Well-balanced with smooth notes of honey and toffee, a little smoke and malted barley with just a hint of oak.

Finish: Short and there are notes of fudge and oak.

Midleton Rare

The nose is complex and well-balanced with notes of spice, potpourri, wood resin, oak and juicy cereals. The palate is creamy and sweet with notes of fresh flowers, butterscotch and vanilla. The finish is long and spicy.

Midleton Rare – Barry Crockett

Released in 2011, Midleton's Barry Crockett edition was named after the distillery's master distiller, and it is aged in both bourbon and new American oak barrels! Very interesting indeed and a limited release of around 2,500 bottles per year.

Nose: Soft, sweet notes of barley, floral honey, rosemary, citrus, cut hay, Summer meadows and toffee apples.

Palate: Sweet tobacco leaves and ceda, sugared peels, toffee, honey softness, vanilla and boiled sweets.

Finish: Very creamy and vanilla-rich, cinnamon and a little pear drop on the tail

The Irishman A beautiful Irish whiskey, made by blending old pot still whisky with 70% malt whisky which was selected by Bernard Walsh. Aged in bourbon casks, this is a creamy, sweet and supple gem!
Nose: Sweet and spicy, with hints of caramel, black pepper, stewed fruits, cinnamon and peaches. Loads of vanilla too, and a hint of sweet charred oak. Palate: Malt, chocolate digestives, vanilla yoghurt, tangy oak, tropical fruits and creme caramel. Finish: Medium length, with oak and butterscotch.
