FRAZER’S CF BENEFIT BBQ -- 2014

Basic cooking rules will apply, be courteous and use common sense. Contestants must keep food in a safe environment and prepare food in a sanitary manner. Meat should be kept at 40 degrees or less and cooked meat should be kept maintained at 140 degrees or above in a covered container. Meat will be cooked on the day of the contest only. A paid contestant may cook in all categories but only one cut of meat to be judged in each category. Obtain entry containers once you arrive at the cookers area. Any changes or updates will be communicated to each team or posted in a central location of the cookers area. Cooks meeting to be held @ 09:00 AM, Saturday.

The cooking area is located on the Frazer ranch at Koerth, TX. Some parking will be allowed near the cook sites. Fires will need to be self-contained in metal containers and off the ground. Fires should be of wood or wood substance only for the meat selections. Be courteous on the size of your sites, as they will vary to each team’s needs. Generators are allowed in the cooking area. Port-o-potties will be provided for your convenience. Also whatever you bring, take back with you!

Entries should be presented to the judges in the provided containers only. Do not use foil to cover the entries. No tampering with or marking of the judging containers. Remember to retain one ticket and leave the taped-on ticket with the container. Any tampering with the taped-on ticket or judging container will disqualify that entry. Fill pinto bean and chili containers to at least ¾ full; more is okay. 8 single pork ribs, one chicken half, and 8 single ¼ in. thick slices of brisket to be provided for judging entries. No garnishes or decoratives such as sauce, onions, bacon, jalapenos, vegetables, etc., should be used on meat entries. The Frazers” and the Cystic Fibrosis Foundation will not be responsible for theft, damage or injury sustained during this event. NO FOUR WHEELERS, GOLF CARTS, SCOOTERS, Etc CAN BE BROUGHT ON PROPERTY FOR PERSONEL USE.
