1. Call to order

Martin Makulowich called the meeting to order at 7:30 pm. Due to June elections, he dissolved the board and called attending board members for the swearing in.

2. Code of Ethics

David Crowfoot lead the swearing in of board members-Fred Malley CCC, Al Kennedy, David Swanson-Reinhardt CCC, Christopher Sprentz CCC, Arvie Obafial, Mars Bacani and Martin Makulowich CCC. We will catch the remainder at the next board meeting.

3. Welcome

a) Introduction of guests

It was good to see Fred Zimmerman CCC come out for the evening.

b) Introduction of host Bob Russell and thank you to Pratt’s Food Service

Bob thanked all for attending and briefly outlined the positive growth of the company over the past 3 years in the Calgary market. Fred Malley CCC thanked chefs Ferdinand and Andy for the excellent buffet dinner.

4. Speaker

Electrolux integrated cook and chill system was presented by Celco Inc in partnership with Pratt’s. National Sales Manager Walter Rosizky and Food Applications Consultant/Corporate Chef Helen Mason outlined the new system and its benefits to operators, some an industry first. Of particular interest is a configuration that permits immediate transfer from programmed cooking to a chill and freezer chamber. Both units were on operational display and used in the preparation of the evening’s buffet. The system also provides documentation for partial and full HACCP applications. a) Golf Tournament September 1

Chris Sprentz CCC, organizer, reported on a successful day at Springbank Links with outstanding weather. 44 golfers participated. A full report will be available on our website.

b) Honour Society Induction of Otto Daniels CCC – tabled

c) CCI presentation to Kevin Wall CCC

Mikael Volke CCC, local CCI chair, presented Kevin with his certificate and pin. Kevin did his practical in Edmonton in late June.

d) 2017 National Convention update

Fred Malley CCC announced that the national board selected the Hyatt Regency Calgary as the venue. The dates will be from May 24 to 29, 2017.

8. New Business

a) National Lifetime Achievement Award to Blake Chapman

Fred Malley CCC outlined Blake’s achievements on behalf of the national board and presented him with a framed certificate.

b) New member swearing in tabled

c) International Chef’s Day October 20.

Nestle is the world sponsor of an initiative focusing on elementary school children. Contact Fred for more details.

d) Children’s Christmas Party December 27

Location is the Deerfoot Inn & Casino. Registration is set up on the website. Deadline for registering is November 15. Santa gifts provided for children up to 12 years old. Children and grandchildren qualify.

e) HOFEX HKICC competition results

Margaret Turner CCC of Sait, team manager introduced coaches Gerd Steinmeyer CCC, Sait, and Dean Kanuit, Executive Chef of the Glencoe Club. Team members are Mathew Liesemer, Madison Miller, Benjamin Miller and Brayden Reddick. Congratulations to all on a job well done. There is a report on our website listing all the achievements.

f) Christmas Dinner at Spruce Meadows November 30

Tickets are available tonight from Dean Mitchell and on line through Paypal. Priced at $100 plus GST, which represents an excellent value. Many thanks to Great Events Catering’s Ulrich Keunz and Daryl Kerr for their generous support.

g) Life member’s recognition

Martin Makulowich CCC presented to Fred Malley CCC.

h) Resignation

Evelyn Makulowich, our book keeper is stepping back and we will be transitioning by the new year.

i) 2016 Dues

Notices will be going out in November. Please remit early so our votes are counted at the national convention.

j) Easter Seals

Andy Waters is responsible once again. Dinner will be held at Winsport on April 8, 2016. Two prep days in advance.

k) Soup project for Habitat for Humanity and Soup Sisters’ Big Stir

To celebrate International Chef’s Day, Simon Dunn CCC is heading this up with Mike Dekker CCC. GFS is supporting the association by providing all the ingredients for the soups. There will be a soup making day on October 18 at Sait and the Habitat component will be executed by Saffron Personal Chef Services later in the week. The Big Stir happens at the Calgary Farmer’s Market on November 3. Simon and Mike are running a station at the Big Stir. Check out the Big Stir website for further information.

l) Donation

Fred Malley CCC thanked Werner Kohl CCC for his generous donation of some trophies.

A presentation kit is available from Nestle to guide a chef through a presentation and demonstration targeting elementary students. Initiative must be completed in October. e) WACS endorsed culinary competition in Toronto, April 28, 29 and March 1, 2016

f) Senior chefs competition at national convention will have a new scope starting in 2016.

g) CCFCC National convention May 15 to 20 in Windsor, Ontario

h) Saputo Junior Chefs Competition March 5, 2016 at Sait Polytechnic. Simon Dunn and Mike Dekker are coordinating. We are waiting on the scope from national.
