Preamble:
A coffeehouse is an establishment which primarily serves prepared coffee or other hot beverages. It shares some of the characteristics of a bar, and some of the characteristics of a restaurant. As the name suggests, coffeehouses focus on providing coffee and tea as well as light snacks. From a cultural standpoint, coffeehouses largely serve as centers of social interaction: the coffeehouse provides social members with a place to congregate, talk, write, read, entertain one another, or pass the time, whether individually or in small groups.
Assignment instructions:
PART A: Briefly outline the history of the coffee shop. Describing:
  • What is a coffee shop?
  • Detail why the coffee shop has become more popular over the last 10 years.
  • What are the different types of coffee beans?
  • Regions where Coffee is grown
  • What are the different styles of coffee beverages and how are they made? Flat white etc.
PART B: Case study activity:
Research a coffee shop chain (Starbucks, The Coffee Club, Gloria Jeans, Merlo Coffee)
  • How many franchises (shops) do they have in Australia/ worldwide?
  • When did they first open, what is there history here in Australia?
  • Identify the establishment’s ethos, values and or mission statement.
  • What are some of the more unusual coffee beverages they offer?
  • Do they serve food; if so list a few of their menu items?
PART C: Design your own coffee shop food and beverage menu.
  • Name your coffee shop
  • Provide a minimum of 6 different types of coffee (flat white, short black, cappuccino etc).
  • Provide a minimum of 10 different food menu items (burgers, nachos etc).
  • In your appendix you should attach a standard recipe for making at least one of the coffees and at least one of the food menu items, ready to hand your employees.
